Mexican Chicken Casserole is the perfect quick meal for your family! This casserole is made with shredded chicken, beans, rice, salsa, diced tomatoes and shredded cheese. It is baked to perfection in under 30 minutes and also makes great leftovers! 

Ingredients 

  • 1 cup basmati rice , or brown rice or rice of your choice
  • 1 can refried beans, {or sub in black or red beans}
  • 3 cups chicken, diced or shredded
  • 1 can diced tomatoes , {you can use diced with green chilies for extra flavor}
  • 2 cups sharp cheddar cheese , {or cheese of your choice}, shredded
  • 1 cup salsa
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Green onion, for garnish
  • cilantro , for garnish

Instructions 

  • Preheat your oven to 350 degrees F (175 degrees C).
  • Prepare the rice according to the package instructions until it is fully cooked and fluffy.
  • Lightly spray a 9 x 13-inch casserole dish with non-stick cooking spray. Evenly spread the can of refried beans across the bottom of the dish. For an alternative, you can use black, red, or pinto beans instead; if you prefer a creamier texture, mash them slightly before spreading.
  • In a large mixing bowl, combine the shredded chicken, salsa, diced tomatoes (undrained), cumin, chili powder, and half a cup of shredded cheese. Once the rice is cooked, add it to this mixture and stir everything thoroughly until all ingredients are well combined and coated with the flavors.
  • Carefully spoon the chicken and rice mixture over the bean layer in the prepared casserole dish, spreading it out evenly. Sprinkle the remaining 1 1/2 cups of shredded cheese over the top of the casserole.
  • Bake in the preheated oven for 15 to 20 minutes, or until the cheese is beautifully melted and bubbly, and the casserole is heated through. For a golden-brown crust, you can briefly broil it for the last minute (watch carefully!).
