- It’s absolutely fine if the risotto hasn’t completely soaked up the last cup of broth before you transfer it to the oven! It will continue to absorb the liquid and finish cooking to perfection during the baking process.
- To maintain the pure flavor and color of your risotto, it’s best practice to wipe the skillet clean with a paper towel after searing the chicken and before you start cooking the vegetables and rice. This removes any dark, burnt bits and excess oil.
- Store any leftover risotto in an airtight container in the refrigerator for up to 3 days.
- This dish can be reheated in the microwave, or on the stove top. If the risotto looks a little dry, simply add a splash of chicken broth (or water) to loosen it up and restore its creamy texture.
