Ingredients

  • 4 Sweet Corn (about 3 cups cooked kernels)
  • 1-15.5 oz can black beans, drained and rinsed
  • 1/4 cup red onion, chopped
  • 1 green pepper, seeds removed, chopped (or pepper of your choice like yellow or red)
  • 1 avocado, seed removed, chopped
  • 4 green onions, green parts chopped
  • 1/2 cup fresh cilantro, chopped
  • 1 Tablespoon fresh lime juice
  • 1 teaspoon ground cumin
  • 1/2 teaspoon red pepper flakes (cayenne pepper optional for extra spice)
  • 2 Tablespoon extra virgin olive oil
  • Salt and black pepper to taste

Instructions

  1. Husk the ears of corn.
  2. Fill a large pot about 3/4 full with water and add a dash of salt. Bring the water to a boil over medium-high heat.
  3. Once boiling, reduce heat to medium and carefully add the husked ears of corn. Cook for 4 minutes.
  4. Drain the hot water and immediately run the cooked ears of corn under cold water to stop the cooking process. Set aside to cool completely.
  5. In a large mixing bowl, combine the drained and rinsed black beans, chopped red onion, chopped green pepper, chopped avocado, and chopped green onions.
  6. Once the corn is cool enough to handle, use a sharp knife to carefully cut the kernels off the cob. Add the fresh corn kernels to the mixing bowl with the other salad ingredients.
  7. In a small jar with a lid (like a mason jar) or a small bowl, combine the fresh cilantro, fresh lime juice, cumin, red pepper flakes, and extra virgin olive oil. Shake or whisk vigorously until well combined. Taste and adjust seasoning with salt and pepper as needed.
