  • 1- 15 ounce can black beans, rinsed and drained
  • 1/2 cup salsa (your favorite kind)
  • 1/4 cup fresh cilantro, chopped, plus extra for garnish
  • 6-8 small flour or corn tortillas
  • 1/2 cup shredded cheese (cheddar, Monterey Jack, or Pepper Jack)
  • Optional: Diced red onion or avocado for topping

Instructions 

  • In a medium-sized bowl, beat the eggs with the milk, chili powder, cumin, salt, and pepper until well combined.
  • Place a medium-sized non-stick skillet on the stovetop and heat over medium-low or medium heat. Once heated, spray with non-stick spray or add a small pat of butter and heat until melted.
