Why the Instant Pot is a Game Changer for Busy Cooks

Our featured Instant Pot Vegetable Mac and Cheese recipe is, as the name suggests, cooked in a pressure cooker – specifically, the incredible Instant Pot. Over time, I’ve grown to appreciate my Instant Pot more and more with each use. I must confess, when I first got it, I was a little intimidated by this powerful kitchen appliance. The loud hiss of steam releasing from the pressure cooker used to send me scurrying in the opposite direction!

However, after consistently using it over the past six months, I’ve gained immense confidence. Now, it’s my ultimate lifesaver for whipping up a quick bowl of soup, a versatile side dish, an energizing breakfast, or even a satisfying snack. The Instant Pot truly excels at so many tasks, making it an indispensable appliance for anyone with limited time for meal preparation. Its multi-functional capabilities mean fewer pots and pans, less cooking time, and more moments spent enjoying delicious food with loved ones.

The Benefits of Adding Vegetables to Your Mac and Cheese

With three energetic boys under the age of six, I am constantly seeking shortcuts and quick, nutritious meal ideas. Now, I can almost hear some of you questioning why on earth anyone would add vegetables to a perfectly good bowl of mac and cheese. I understand your skepticism! For those who prefer their mac and cheese unadulterated, feel free to simply omit the veggies.

However, I can happily report that my family absolutely loved the addition of vegetables in this dish. Not only do they infuse the mac and cheese with beautiful color, making it more appealing, but they also significantly boost the vitamin and nutrient content. It’s an easy way to sneak in extra goodness, especially for picky eaters, without sacrificing the beloved cheesy flavor. Plus, the texture contrast can be surprisingly delightful, adding a fresh element to a classic comfort food.

The Power of Dairy in Your Diet

Beyond its delicious taste, this Instant Pot Vegetable Mac and Cheese provides a substantial dose of protein and a wealth of essential nutrients. Did you know that a single serving of milk, cheese, or yogurt delivers a powerful 8 grams of high-quality protein, along with a comprehensive package of nine essential nutrients? These include calcium for strong bones, Vitamin D for calcium absorption, potassium for healthy blood pressure, and B vitamins for energy, among others.

Health experts generally recommend consuming three servings of low-fat or fat-free dairy foods every day to meet your nutritional needs. However, it’s crucial to remember that not all “milks” are created equal. Non-dairy alternatives such as soy, almond, and coconut milk do not naturally contain the same robust nutrient profile as cow’s milk. While they can be part of a balanced diet, it’s important to check labels carefully for added fortifications if you’re relying on them for specific nutrients. To gain a clearer understanding of how cow’s milk stacks up against various milk alternatives, you can explore inside the dairy case at your local grocery store through informative resources.

Meet Your Local Dairy Farmers

Have you ever considered where your milk comes from? If you live in Ohio or West Virginia, there’s a good chance it comes from a local dairy farm. It’s fascinating to know that one such dedicated dairy farmer lives right near me in Cleveland. Frank Burkett is a 5th-generation dairy farmer, operating Clardale Farms in Canal Fulton, just about an hour outside of Cleveland. His family’s commitment to dairy farming runs deep, spanning generations.

Frank works alongside his three uncles and several cousins, a testament to the family-oriented nature of dairy farming. Together, the Burkett family meticulously cares for 690 dairy cows and cultivates 900 acres of cropland. This integrated approach ensures the cows are well-fed and the land is sustainably managed. Their dedication is truly inspiring. You can actually watch Frank explain to fellow food blogger Shugary Sweets how he and his family prioritize the well-being of their cows and calves on their farm, offering a glimpse into the compassionate care behind every glass of milk.

Recipe Tips and Modifications for Your Perfect Mac & Cheese

  • Customizing Your Cheese Blend:

    I love experimenting with a mix of cheeses for this recipe to create a complex flavor profile, but you can absolutely use just one type if you prefer. Sometimes, I venture out with a sophisticated smoked gouda or add a zesty kick with spicy pepper jack cheese. Consider a blend of sharp cheddar for tang, mozzarella for incredible stretch, and a touch of Parmesan for savory depth. Don’t be afraid to try asiago or fontina for unique twists!

  • Choosing Your Vegetables:

    For convenience and quick cooking, I typically opt for small, frozen vegetables in my mac and cheese. Frozen mixed vegetables are fantastic for adding both vibrant color and a wide array of nutrients. However, feel free to use individual vegetables like corn and peas, broccoli florets, or even finely diced carrots – whatever your family enjoys most will work wonderfully here.

  • Adding a Crunchy Topping:

    If you appreciate a delightful crunch with your creamy mac and cheese, a sprinkle of panko breadcrumbs on top after it’s done cooking is a fantastic idea. For an extra layer of flavor, you can toast the panko lightly in a pan with a little butter before sprinkling, giving it a golden-brown crispness that truly elevates the dish.

  • For the Spice Enthusiasts:

    Are you a fan of a little heat? If so, you absolutely must try adding a few squirts of sriracha to your mac and cheese! The subtle spice beautifully complements the rich cheese, creating a dynamic flavor that will make any spice lover incredibly happy. Start with a small amount and add more to taste.

Instant Pot Vegetable Mac and Cheese is a quick and easy meal the whole family will love.

Ingredients

  • 4 cups chicken broth , or vegetable broth or water
  • 16 ounces medium pasta, {I like using elbow macaroni}
  • 3 Tablespoons butter, cut into four small pieces
  • 1 teaspoon dry mustard
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1 cup whole milk, {or use milk of your choice}
  • 1 1/2 cups frozen vegetables , {I used mixed vegetables}
  • 1 cup extra-sharp cheddar, shredded
  • 1 cup mozzarella, shredded
  • 1/2 cup Parmesan cheese, shredded

Instructions

  • Combine the broth (or water), pasta, butter, dry mustard, garlic powder, salt, and pepper in your Instant Pot or pressure cooker. Give it a good stir to ensure everything is well mixed.
  • Securely seal the lid and set your Instant Pot to Manual HIGH Pressure for 4 minutes. Once the cooking cycle is complete, perform a quick release of the steam.
  • After all the steam has been released, unplug the Instant Pot. Carefully remove the lid, making sure to open it away from your face and using a towel or oven mitts for safety.
  • Stir in the milk, all the shredded cheeses, and the frozen vegetables until everything is thoroughly combined and the cheese starts to melt. Reseal the lid and let the mac and cheese sit for another 4-5 minutes, allowing the residual heat to soften the frozen vegetables to your desired tenderness.
  • Serve warm, garnished with fresh parsley if desired, and enjoy!

Notes

  • You have full flexibility with the small vegetables you choose to use. I find frozen vegetables particularly convenient as they cook quickly once you reseal the Instant Pot. If mixed vegetables aren’t your preference, small corn and peas are excellent alternatives.
  • While I prefer whole milk for a richer, more flavorful mac & cheese, feel free to use any type of milk you like or have on hand.
  • For the cheese, I typically use a variety for depth of flavor, but your choice is entirely up to your personal taste. Sometimes, I’ll try adding asiago or even smoked gouda for a distinct and delicious variation.
  • If you enjoy a bit of textural contrast, a sprinkle of crispy panko breadcrumbs on top before serving adds a wonderful crunch.
  • This recipe yields a generous amount of mac & cheese. If you have a smaller family or wish to minimize leftovers, you can easily cut all ingredients in half.
