Essential Ingredients for Your Antipasto Skewers

Crafting the perfect antipasto skewer starts with selecting the finest ingredients. Here’s a breakdown of what you’ll need, along with some tips for optimal flavor:

  • Cheese Tortellini: For a delightful chew and comforting taste, cheese tortellini is a fantastic base. While any tortellini works, I highly recommend using fresh tortellini, often found in the deli or refrigerated pasta section of your grocery store, as it tends to have a superior texture and flavor compared to its frozen counterparts. Cook it al dente according to package directions, then cool completely before threading.
  • Fresh Mozzarella Balls: The creamy, mild flavor of fresh mozzarella is essential. Look for small mozzarella balls (ciliegine or bocconcini) that are perfectly bite-sized for skewers. If you can find marinated mozzarella balls packed in oil with herbs, even better! They add an extra layer of flavor and moisture.
  • Olives: A mix of green and kalamata olives offers a wonderful contrast in flavor and color. Green olives, especially pimento-stuffed varieties, provide a bright, briny kick, while Kalamata olives bring a richer, fruitier note. Feel free to experiment with your favorite type of olive or even try cheese-stuffed olives for an added treat.
  • Salami: Thinly sliced salami is a savory addition that complements the other ingredients beautifully. Its salty, slightly spicy notes add depth and a satisfying texture. Ensure it’s sliced thin enough to fold easily onto the skewer. For a vegetarian option, simply omit the salami.
  • Roasted Red Peppers: These add a burst of sweet, smoky flavor and a gorgeous splash of red. You can buy jarred roasted red peppers (simply drain and pat dry) or roast your own for an even fresher taste. Fire-roasted varieties offer an intensified smoky depth.
  • Cherry Tomatoes: Fresh, ripe cherry tomatoes are a must for their juicy sweetness and vibrant color. You can use them whole, or for a slightly different presentation, cut them in half before threading. Larger tomatoes can also be used, simply cut into generous chunks.
  • Fresh Herbs: Fresh basil is a star in this recipe, lending its distinct aromatic and slightly peppery notes. I love to incorporate basil leaves directly onto the skewers for flavor infusion. For a final flourish, a sprinkle of chopped fresh parsley over the finished skewers adds brightness and an appealing visual touch.

Creative Ways to Customize Your Antipasto Skewers (Kabobs)

The beauty of antipasto skewers lies in their adaptability. Feel free to get creative and tailor them to your personal preferences or what you have on hand. Here are some fantastic ideas to modify your antipasto kabobs:

  • Olives: If you’re not a fan of olives, you can certainly leave them out. Otherwise, explore different varieties! Beyond green and Kalamata, consider using black olives for a milder flavor, or seek out specialty olives stuffed with cheese, garlic, or pimentos for an extra layer of taste.
  • Cheese: While fresh mozzarella is a classic choice, don’t hesitate to experiment with other cheeses. Cubed varieties like sharp cheddar, zesty pepper jack, or even a firm provolone work wonderfully. Marinated feta cubes could also add a Mediterranean twist.
  • Meat: Salami provides a delightful savoriness, but many other cured meats can take its place. Try spicy pepperoni, thinly sliced turkey or ham for a lighter option, or elegant prosciutto for a more gourmet feel. For a rich, smoky flavor, add small pieces of cooked chorizo.
  • Herbs: Fresh herbs are key to brightening the flavors. Basil is excellent, but parsley, mint, oregano, or thyme can also add beautiful aromatic notes. I often thread basil leaves directly onto the skewers and then sprinkle a mix of finely chopped fresh herbs over the finished product for maximum impact.
  • Vegetables: Expand the veggie rainbow! Artichoke hearts (marinated are great), tangy pepperoncini peppers, chunks of colorful bell peppers, crisp cucumbers, or even blanched zucchini ribbons can all be threaded onto these versatile skewers.
  • Dressing: The honey balsamic drizzle is a fantastic choice, but you have many options for a finishing touch. A classic Italian dressing, a simple balsamic vinegar, or a light lemon-herb vinaigrette would all be delicious. For an intense, sweet-tart finish, I personally prefer a rich balsamic glaze, which adheres beautifully to the ingredients. You can also serve them plain; they’re delicious either way!

What Exactly are Antipasto Skewers?

Antipasto, meaning “before the meal” in Italian, refers to the traditional first course of a formal Italian meal. It’s an array of small, flavorful dishes designed to whet the appetite. Historically, antipasto plates feature cured meats, various cheeses, olives, marinated vegetables, and sometimes bread. Antipasto skewers take this delightful tradition and transform it into a convenient, modern, and perfectly portioned appetizer. By threading these classic components onto a stick, you create a vibrant, easy-to-eat bite that captures the essence of Italian hospitality and flavor without the need for plates and forks.

Tips for Crafting Perfect Antipasto Skewers Every Time

  • Quality Ingredients Matter: Since these skewers are all about fresh, distinct flavors, using high-quality ingredients will make a noticeable difference in the final taste.
  • Prep Ahead: Most of the ingredients can be prepped (washed, sliced, drained) ahead of time, making assembly a breeze just before serving.
  • Soak Bamboo Skewers: If you’re using bamboo skewers, soak them in water for at least 30 minutes before assembling. This prevents them from splintering and makes threading much easier.
  • Balance of Flavors and Textures: Aim for a good mix of savory, sweet, salty, and tangy. Vary textures with soft cheese, firm tomatoes, chewy tortellini, and crisp peppers.
  • Visual Appeal: Thread ingredients in a repeating pattern for a visually appealing skewer. Alternate colors to create a striking presentation.
  • Cool Tortellini Completely: After cooking, ensure your tortellini is fully cooled before adding to the skewers. Warm tortellini can heat up other ingredients and affect freshness.
  • Drizzle Just Before Serving: As mentioned, add your honey balsamic drizzle right before presenting the skewers to prevent them from becoming soggy.

Simple Steps to Assemble Your Delicious Antipasto Skewers

Assembling these skewers is a straightforward and enjoyable process. Follow these simple steps for perfectly crafted antipasto bites:

Step 1: Cook and Cool Tortellini: Begin by cooking your chosen tortellini according to the package instructions. While the pasta is cooking, take this opportunity to arrange all your other ingredients on a large cutting board or in small bowls. Have your skewers ready. Once the tortellini is tender, drain it and let it cool completely. This is crucial for maintaining the integrity of the skewers and preventing premature spoilage or wilting of other ingredients.

Step 2: Expertly Thread Your Skewers: Now comes the fun part! To create a balanced and visually appealing skewer, start with a cherry tomato at one end. Follow this with a green olive, then a Kalamata olive, a piece of tortellini, a folded slice of salami, a vibrant roasted red pepper, a fresh basil leaf, a creamy mozzarella ball, another tortellini, two more olives, and finish with another cherry tomato. The order can be customized, but this sequence ensures a good distribution of colors and textures. Repeat this threading process for each skewer until all your ingredients are used or you have the desired number of skewers.

Step 3: Whisk Together the Flavorful Dressing: In a mason jar or small bowl, combine the honey, high-quality extra virgin olive oil, tangy balsamic vinegar, a selection of fresh herbs (like chopped parsley, oregano, and basil), a pinch of salt, and a dash of black pepper. Secure the lid on the mason jar and shake vigorously, or whisk thoroughly in a bowl, until all the ingredients are well combined and emulsified. This creates a beautifully balanced sweet and savory drizzle.

Step 4: Drizzle and Serve: Arrange your assembled skewers artfully on a serving platter. Just before serving, generously drizzle the honey balsamic dressing over all the skewers. For an extra touch of freshness and visual appeal, sprinkle a little more chopped fresh herbs over the top. Serve immediately for the best experience, or store them in the fridge until you’re ready to impress your guests.

Serving Suggestions for Your Antipasto Skewers

These versatile skewers are perfect on their own, but can also be part of a larger spread. Here are some ideas:

  • Appetizer Platter: Arrange them beautifully on a large platter alongside other Italian or Mediterranean-inspired appetizers like bruschetta, hummus and pita, or a fresh Caprese salad.
  • Light Lunch or Dinner: Serve them with a simple green salad and crusty bread for a refreshing light meal.
  • Game Day Snack: Easy to grab and eat, they are a fantastic option for casual sports viewing parties.
  • Pair with Drinks: They pair wonderfully with a crisp white wine like Pinot Grigio, a light-bodied red, or even a sparkling rosé.

Storage Tips for Freshness

  • Make Ahead: As noted, you can assemble the skewers (without the dressing) up to 24 hours in advance. Store them in an airtight container or covered tightly with plastic wrap in the refrigerator.
  • Leftovers: Any leftover skewers should be stored in an airtight container in the fridge for up to 2-3 days. The dressing can be stored separately and added just before eating, or if already dressed, consume quickly for best quality.
  • Freezing: Due to the fresh ingredients and tortellini, these skewers are not suitable for freezing. Enjoy them fresh!

Frequently Asked Questions About Antipasto Skewers

Can I make these antipasto skewers in advance?

Absolutely! You can assemble these delicious skewers up to a full day (24 hours) in advance. To keep them fresh, cover the platter or container tightly with plastic wrap or transfer them to an airtight container and store them in the refrigerator. If you’re using fresh herbs like basil or parsley, it’s best to add them and the balsamic drizzle just before you plan to serve, as this will maintain their vibrant appearance and prevent wilting.

What type of skewers are best for this recipe?

You have a couple of great options for skewers: metal or bamboo. Both work well! If you opt for bamboo skewers, a useful tip is to soak them in water for about 30 minutes before you start assembling. This helps prevent them from splintering and makes it much easier to thread the ingredients. The key is to choose skewers that are long enough to hold a good variety of ingredients to create those appealing, substantial bites.

Can I make these skewers vegetarian?

Yes, it’s very easy to adapt this recipe for a vegetarian diet! Simply omit the salami from the ingredients. The skewers will still be packed with incredible flavor from the tortellini, mozzarella, olives, roasted red peppers, cherry tomatoes, and fresh herbs. You can even add other vegetarian elements like marinated artichoke hearts or additional vegetables to replace the meat.

How should I serve these antipasto skewers?

These skewers are best served chilled or at room temperature. Arrange them neatly on a large platter or tray. They make a fantastic standalone appetizer, but also fit perfectly into a larger buffet spread. For a stylish touch, you can place a small bowl of extra balsamic glaze or Italian dressing on the side for guests who prefer more dressing.

These delightful Antipasto Skewers are the perfect grab-and-go snack or elegant appetizer for any summer gathering, backyard BBQ, or festive holiday celebration. Featuring an irresistible array of your favorite Italian-style ingredients, each colorful skewer is a delicious bite, expertly drizzled with a sweet honey balsamic glaze.

Ingredients

  • 1 – 9 ounce package of cheese tortellini
  • 1 – 12 ounce fresh mozzarella cheese balls
  • 1 – 16 ounce jar of olives {I like the pimento stuffed}
  • 1 – 16 ounce jar of kalamata olives
  • 4 ounce of salami
  • 3 ounce of roasted red peppers
  • 2 cups of cherry tomatoes
  • 1 cup of fresh basil
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh green onions, chopped

FOR THE DRESSING

  • 2 teaspoons honey
  • 1/4 cup extra virgin olive oil
  • 3 tsps balsamic vinegar
  • 1 teaspoon fresh parsley, oregano, basil, chopped
  • 1/2 teaspoon salt
  • 1/8 teaspoon black pepper

Instructions

  • Cook the tortellini according to the package directions until al dente.
  • While the tortellini cooks, gather and lay out all your other ingredients, and prepare your skewers and a large cutting board.
  • Once the tortellini is cooked, drain it and allow it to cool completely before proceeding.
  • To assemble the skewers, start by threading a cherry tomato, followed by a green olive, a kalamata olive, a tortellini, a folded slice of salami, a roasted red pepper, a basil leaf, a mozzarella ball, another tortellini, two more olives, and finally, another cherry tomato. Repeat this sequence for each skewer, ensuring an appealing and balanced distribution of ingredients.
  • For the dressing, combine the honey, extra virgin olive oil, balsamic vinegar, fresh herbs, salt, and black pepper in a mason jar. Seal the jar and shake vigorously, or whisk in a bowl until all ingredients are thoroughly mixed and emulsified.
  • Arrange the assembled skewers on a serving platter. Just before serving, generously drizzle the prepared dressing over all the skewers and garnish with a sprinkle of additional fresh herbs.
  • Serve immediately for peak freshness and flavor, or store them in the refrigerator until you’re ready to enjoy.

Notes

  • Feel free to customize these skewers with any of your favorite antipasto ingredients! Excellent additions include marinated artichoke hearts, sliced banana peppers, zesty pepperoncinis, different types of cured meats like pepperoni or prosciutto, and any variety of olives you enjoy.
  • While the honey balsamic dressing adds a fantastic sweet and tangy layer, these skewers are also delicious without it. Alternatively, for a richer, thicker glaze that beautifully coats the ingredients, consider drizzling them with a store-bought or homemade balsamic glaze.
