  • 1 cup matchstick carrots
  • 8-10 thinly sliced green onions, about a bunch-green parts chopped
  • 1/4 cup fresh mint leaves, chopped
  • 1/4 cup fresh parsley, chopped
  • 3/4 cup feta cheese, crumbled
