Tropical Avocado Toast - healthy lunch

Tropical Avocado Toast makes the perfect quick breakfast or snack. The creamy avocado is mixed with lime juice, chopped cilantro and salt and spread on toast and topped with chopped pineapple, mango and extra cilantro.

Ingredients

  • 2 slices bread, toasted (e.g., Pepperidge Farm Harvest Blends Seeded bread)
  • 1 avocado, skin and pit removed
  • 2 Tablespoons lime juice
  • 1 pinch sea salt
  • 2 Tablespoons cilantro, chopped (extra for garnish)
  • 1/4 cup mango, chopped
  • 1/4 cup pineapple, chopped
  • Crushed red pepper (optional)

Instructions

  1. Toast the two slices of bread to your desired crispness. While the bread is toasting, take the peeled and pitted avocado and mash it thoroughly in a small bowl using the back of a fork until creamy.
  2. To the mashed avocado, add the fresh lime juice, sea salt, and the chopped cilantro. Mix these ingredients well to combine, ensuring the avocado is evenly seasoned.
