- 1/3 cup oil-packed sundried tomatoes, a little extra for garnish
- 2 cloves garlic, peeled
- Kosher salt, or sea salt
- 1 tablespoon flat-leaf parsley, fresh chopped
- 1/4 cup extra virgin olive oil, might need up to a 1/2 cup depending on texture

Roughly chop the sun-dried tomatoes and place them in a food processor with the peeled garlic cloves and a generous pinch of sea salt.

Pulse these ingredients together until they form a coarse, chunky paste. Then, add the drained cannellini beans and the fresh chopped parsley. Continue to pulse until the mixture starts to combine and becomes thicker.

With the food processor motor running, slowly drizzle in the extra virgin olive oil a little at a time. Continue processing until the dip is beautifully smooth and creamy. Start with 1/4 cup of olive oil, but feel free to add up to 1/2 cup, depending on your desired consistency. For a thicker spread, use less oil; for a runnier dip, add more.
