- 1 teaspoon cinnamon
- 1/2 teaspoon ground allspice
- 1/2 teaspoon ground clove
- 1 teaspoon oregano
- 1 cloves garlic , chopped into small pieces
- 2 bay leaves, broken into small pieces
- Rosemary
- parsley, Fresh
Instructions

Remove the roast from the fridge and let sit on the counter while you prepare the spices. This allows it to come closer to room temperature for more even cooking.

In a small mixing bowl, thoroughly combine the ground coriander, cumin, kosher salt, black pepper, cayenne pepper (if using, adjust to your spice preference), cinnamon, allspice, clove, and oregano. Mix well to ensure an even distribution of flavors.

Generously rub this flavorful spice mixture all over the sirloin roast, ensuring it’s completely and evenly coated. Once seasoned, cover the roast tightly with plastic wrap and refrigerate for at least one hour. For deeper flavor penetration and tenderness, you can let it marinate in the fridge overnight.

Preheat your oven to a high temperature of 450°F (232°C). Place the seasoned roast in a sturdy roasting pan, ideally on a wire rack within a baking sheet pan. Finely chop the garlic cloves and break the bay leaves into small pieces. Using a sharp knife, make several small, shallow slits all over the surface of the roast. Carefully insert the small pieces of garlic and bay leaves into these slits.
