    cooked brown rice,

    olive oil

    sweet onion,
    chopped {about 1/2 of a medium onion}

    garlic ,
    minced



  • 1
    pound
    ground pork



  • 1
    lime,
    juiced



  • 3
    Tablespoons
    soy sauce,
    low sodium



  • 2
    teaspoons
    red chili garlic sauce,
    {I use Huy Fong Chili Garlic Sauce}, more or less for spiciness



  • 1
    teaspoon
    chili paste



  • 2
    Tablespoons
    fresh ginger,
    peeled and grated



  • 1
    cup
    cilantro,
    chopped {plus extra for garnish}



  • 3
    green onions,
    green part chopped



  • Salt and pepper to taste



  • 1
    Boston Lettuce,
    washed and separated



  • fresh cilantro,
    Extra, for garnish



  • Unsalted peanuts



  • carrots,
    cut into Matchsticks

Instructions

  • Cook the rice according to package directions.
  • While the rice cooks, heat 2 Tablespoons of olive oil in a large skillet over medium heat. Add the chopped onion and sauté for 2 minutes until softened. Stir in the minced garlic and continue to sauté for another 2 minutes until fragrant.
  • Add the ground pork to the skillet and break it apart. Stir in the fresh lime juice, low-sodium soy sauce, red chili garlic sauce, chili paste, and grated fresh ginger. Cook, stirring occasionally, until the pork is thoroughly browned and cooked through.
  • Once the pork is browned, mix the cooked rice into the pork mixture. Stir in the fresh cilantro and green onions until well combined. Taste and season with salt and pepper as needed.
  • Serve the warm Asian pork mixture with crisp bibb lettuce leaves. Garnish with extra fresh cilantro, crunchy matchstick carrots, and unsalted peanuts for added flavor and texture.

Notes

  • Serving size is approximately 1 3/4 cups of the pork mixture, served with 4 Bibb lettuce leaves. You would use a little less than 1/2 cup of the mixture in each piece of lettuce.
  • The leftovers for these Asian Pork Lettuce Wraps are just as good, if not better, the next day! The flavors truly meld together after a day or two in the refrigerator.
  • You can use any of your favorite cooked rice varieties, from white to basmati or even quinoa.
