  • Heat 2 tablespoons of olive oil in a large skillet over medium-high heat and brown all sides of your chuck roast until deeply caramelized.
  • Transfer the browned chuck roast to the slow cooker. Add all remaining ingredients (onion, garlic, bell pepper, jalapeno, beans, spices, diced tomatoes, beef broth, sugar, tomato paste) to the slow cooker, ensuring the roast is as submerged as possible.
  • Cook the chili on low for 8 to 10 hours, or on high for 3-4 hours, until the beef is incredibly tender and easily shredded.
  • Once cooked, remove the beef and shred it using two forks. Return the shredded beef to the slow cooker and stir it into the chili.
  • Serve warm, garnished with fresh cilantro, green onions, and shredded cheese.
  • Store leftover chili in an airtight container in the fridge for up to 4 days or freeze for up to 6 months.

Notes

  • If the chili is not thick enough for your liking add more tomato paste or a corn starch slurry (1 tbsp corn starch mixed with 1 tbsp cold water) to thicken it up.
  • You can leave the jalapeño out for a milder chili, or you can even add more spice by using extra jalapeños, serrano peppers, or a pinch of crushed red pepper flakes.
  • If you prefer a thicker chili, you can also drain the excess juice from the diced tomatoes before adding them to the slow cooker.
