This dish is not just a meal; it’s an invitation to bring exotic, comforting flavors to your dinner table with minimal effort.
If you’ve never tried baking a pork tenderloin, now is the perfect time to discover its wonders. It’s widely considered one of the easiest and most forgiving ways to cook pork, consistently yielding a tender, moist result. Pork tenderloin is also an incredibly lean cut of meat, making it an excellent source of high-quality protein for those looking for healthy dinner options. Its mild flavor profile means it pairs beautifully with a vast array of seasonings and sauces, from a smoky BBQ glaze to the vibrant Mediterranean rub we’ll be using today.
This recipe ensures you achieve a perfectly tender, juicy piece of pork, infused with the warm, rich, and earthy spices characteristic of Mediterranean cuisine. Many people mistakenly believe that pork needs to be cooked until it turns a completely white or gray color to be safe and ready to eat. However, achieving a slight blush of pink inside the thickest part of the pork at an internal temperature of 145°F is not only safe but also guarantees the most succulent and flavorful results. Overcooking pork is the surest way to dry it out, so embracing that hint of pink is key to a truly enjoyable dish.

The Star Ingredients for This Mediterranean Pork Tenderloin
Crafting a truly exceptional Mediterranean Baked Pork Tenderloin begins with a selection of high-quality ingredients. Each component plays a crucial role in building the layered flavors and ensuring a succulent result.
- Pork: For this recipe, you’ll need either two small pork tenderloins or one large pork tenderloin, totaling approximately 2 pounds. The tenderloin is a lean and tender cut, ideal for quick roasting. Before seasoning, it’s essential to trim any “silver skin” – a tough, silvery membrane that won’t break down during cooking and can make the meat chewy.
- Mediterranean Spice Rub: The heart of this dish lies in its exquisite spice rub, which infuses the pork with deep, aromatic Mediterranean flavors. Our carefully balanced blend includes:
- Coriander: Offers a warm, citrusy, and slightly sweet note.
- Cumin: Provides an earthy, nutty, and pungent undertone.
- Cinnamon: Adds a surprising warmth and subtle sweetness that beautifully complements savory dishes.
- Allspice: Delivers notes of cloves, nutmeg, and cinnamon, tying the blend together.
- Cloves: A powerful, aromatic spice contributing deep, rich warmth.
- Oregano: The quintessential Mediterranean herb, offering a robust, slightly bitter, and peppery flavor.
- Cayenne Red Pepper: An optional addition for those who enjoy a subtle kick of heat, perfectly balancing the warmth of the other spices.
- Garlic: Fresh garlic is indispensable for adding a pungent, savory depth that is a hallmark of Mediterranean cuisine. By inserting small pieces into slits in the tenderloin, the garlic infuses the meat from within as it bakes. If fresh garlic isn’t available or you’re short on time, you can substitute garlic powder by simply adding it directly to the dry spice rub.

Creative Ways to Modify and Elevate Your Pork Tenderloin
One of the joys of cooking is the ability to customize a dish to your personal taste. This Mediterranean Baked Pork Tenderloin recipe is incredibly versatile, offering several delicious avenues for modification and enhancement:
- Lemon: A splash of fresh lemon juice or a sprinkle of lemon zest can dramatically brighten the flavors of the pork. The acidity of lemon not only adds a wonderful citrusy zing but also acts as a natural tenderizer, helping to break down muscle fibers and ensure an even juicier pork tenderloin. Try squeezing fresh lemon over the tenderloin just before baking or as a finishing touch.
- Feta Cheese: For a delightful salty and tangy counterpoint, consider adding crumbled feta cheese. You can sprinkle it over the pork during the last 10 minutes of baking, or serve it as a garnish once the pork is sliced. The warmth will slightly soften the feta, allowing its flavors to meld beautifully with the spices.
- Vinegar: If you enjoy a more pronounced tang and tender texture, incorporating a good quality vinegar can work wonders. Balsamic vinegar offers a sweet and complex depth, red wine vinegar brings a sharp, fruity note, and white wine vinegar provides a crisp, bright acidity. These can be used to create a quick marinade with the spices, allowing the pork to soak up even more flavor and become exceptionally tender.
- Additional Spices: While our core Mediterranean spice rub is fantastic, feel free to experiment with other spices that complement the profile. Smoked paprika can add a lovely smoky depth and color, thyme offers an earthy, peppery note, onion powder enhances savory richness, chili powder can provide an extra layer of warmth, and a touch of Italian seasoning can bring more herbaceous complexity.
- Fresh Herbs: A finishing sprinkle of fresh herbs can elevate the aroma and presentation of your baked pork tenderloin. Fresh parsley adds a clean, peppery freshness, while extra oregano or thyme can intensify the Mediterranean essence. Chop them finely and scatter over the sliced pork just before serving for a burst of vibrant flavor.

How to Make This Delicious Baked Pork Tenderloin Recipe
Creating this flavorful Mediterranean Baked Pork Tenderloin is surprisingly straightforward, perfect for even the busiest evenings. Follow these steps for a tender, juicy, and perfectly spiced meal:
Preheat your oven to 375 degrees F (190 degrees C). Ensuring your oven is at the correct temperature before you start cooking is crucial for even baking and achieving the desired internal temperature.
Step 1: Prepare the Aromatic Spice Rub: In a small, clean bowl, combine all the dry spice rub ingredients: coriander, cumin, cinnamon, allspice, cloves, oregano, and cayenne pepper (if using). Stir these spices thoroughly with a spoon or a small whisk until they are well integrated. This ensures every bite of pork gets an even distribution of flavor. Set this fragrant mixture aside.
Step 2: Expertly Trim and Infuse the Pork: Place your pork tenderloin on a large, clean cutting board. The first important step is to trim off any “silver skin.” This is a tough, iridescent membrane found on one side of the tenderloin that, unlike fat, will not render or soften during cooking. To remove it, slide a sharp knife just under one end of the silver skin, angling the blade slightly upward. Grasp the loosened silver skin firmly with your other hand and, while pulling it taut, gently slide your knife along the length of the membrane, separating it from the meat. Next, using the tip of your sharp knife, make 3-4 small, shallow slits into each pork tenderloin. These slits are where you will insert the small pieces of chopped garlic. Make sure to push the garlic pieces deep into each slit, allowing their pungent flavor to penetrate the meat as it bakes.
Step 3: Season the Pork with Mediterranean Flair: Using your clean hands, generously rub the prepared Mediterranean spice mixture over every surface of each pork tenderloin. Ensure the spices adhere well and coat the meat evenly. This hands-on approach guarantees maximum flavor infusion. Once the spice rub is applied, lightly sprinkle both sides of the tenderloins with salt and freshly ground black pepper to enhance the overall taste profile.
Step 4: Roast to Perfection: Carefully transfer the seasoned pork tenderloins into a large baking dish or onto a rimmed baking sheet. Ensure there’s a little space between them if you’re cooking two. Bake the tenderloins in your preheated oven at 375 degrees F for approximately 30-35 minutes. The most critical aspect of cooking pork tenderloin is ensuring it reaches the correct internal temperature for both safety and optimal juiciness. Use an instant-read meat thermometer to check the thickest part of the pork; it should register an internal temperature of 145 degrees F (63 degrees C). At this temperature, the pork will have a beautiful blush of pink in the center, indicating it is perfectly cooked and incredibly tender, not dry. You might also notice a lovely, slightly crusty exterior from the spice rub.

Once removed from the oven, it’s crucial to allow the pork tenderloin to rest for 5-10 minutes on a cutting board, loosely tented with foil. This resting period allows the juices within the meat to redistribute, ensuring every slice is incredibly moist and flavorful. Skipping this step can lead to dry pork as the juices will simply run out when you cut into it. After resting, slice the pork tenderloin into thin, medallions and serve immediately, garnished with a generous sprinkle of fresh parsley for a burst of color and herbaceous freshness.
Any delicious leftovers can be stored in an airtight container in the refrigerator for up to 3-4 days. This makes it perfect for meal prep, adding a flavorful protein boost to salads, sandwiches, or quick re-heated dinners throughout the week.

Ingredients
- 2 small pork tenderloins or 1 large pork tenderloin {about 2 pounds of pork tenderloin}
- 1 garlic clove, chopped into 6 small pieces
- Salt
- Pepper
Mediterranean Spice Mix:
- 1 teaspoon coriander
- 1 teaspoon cumin
- 1 teaspoon cinnamon
- 1/2 teaspoon allspice
- 1/4 teaspoon cloves
- 1 teaspoon oregano
- 1/4 teaspoon cayenne red pepper {optional for spice}
Garnish:
- Fresh Parsley
Instructions
-
Preheat oven to 375 degrees F.
-
In a small bowl combine the coriander, cumin, cinnamon, allspice, cloves, oregano and cayenne pepper and stir. Set aside.
-
Place pork tenderloin on a large cutting board. Trim the pork tenderloin by removing any silver skin.
-
Cut 3 slits into each pork tenderloin using a sharp knife and insert the small piece of chopped garlic into each slit, making sure to push the garlic into the slit.
-
Using your hands rub the Mediterranean spice mixture over each pork tenderloin on both sides. Sprinkle lightly with salt and pepper on all sides.
-
Put the pork tenderloin in a large baking dish Bake the tenderloin at 375 degrees F for 30-35 minutes, or until the meat thermometer registers 145 degrees F at the thickest part of the pork {there should be a blush of pink in the pork}. Remove from the oven and allow to rest for 2-3 minutes. Slice the pork tenderloin in thin cuts and serve with fresh parsley.
Notes
- There should be a blush of pink in the pork. This is a good thing and ensures that the pork is tender and juicy!
- You can also cut up pieces of bay leaves and tuck those into the pork similar to the garlic. Just cut a few slices into the pork and put the pieces of bay leaves in to the slit. You can pull them out when you are ready to eat the pork.
