This iconic city holds a special place in my memories, stemming from a college trip where the Illini played in the Sugar Bowl. As a sophomore, it was an unforgettable adventure: busloads of friends, the thrill of the game, and a raucous New Year’s Eve celebration. Naturally, a significant portion of that trip involved soaking in the atmosphere (and maybe a few Hurricanes) on the legendary Bourbon Street.

If I were to visit New Orleans today, it would undoubtedly be a very different kind of journey. While a stroll down Bourbon Street might still be on the itinerary, my focus would shift significantly. I’d be spending far more time soaking in the soulful live music that permeates the city – attending Jazz Fest is still a dream of mine! And, of course, a huge part of the experience would revolve around indulging in all the incredible Cajun and Creole cuisine. I’m a massive admirer of the distinctive spices and rich flavors that define their cooking traditions, and they inspire many of my kitchen creations.

A hearty chili mixing tomatillos, ground turkey, white beans, vegetables & Cajun spice for a festive meal.

Ingredients

  • 1 onion, diced
  • 7 garlic cloves, minced
  • 2 celery stalks, diced
  • 1 Tbsp. Herbs de Provence
  • 1 tsp. cumin
  • 3 tsp. Cajun spice
  • 1 lb. ground turkey
  • 1 16oz can of white beans, canned and drained (great northern is what I use)
  • 6 tomatillos, husked, rinsed and chopped
  • 1/2 green pepper, chopped
  • 1/2 red pepper, chopped
  • 8oz canned tomatoes (diced or stewed work)
  • 1 4oz can green chilies with juice
  • 1/2 cup chicken stock
  • 1/4 of a lime, squeezed into chili for flavor
  • 1/4 cup of cilantro, chopped (more for garnish)
  • 1 Jalapeno, seeds removed and chopped
  • 1 Mexican style beer (I used Corona)
  • Shredded cheese for garnish

Instructions

  1. Heat a large Dutch oven or pot to medium-high heat.
  2. Add onion, celery, garlic, and olive oil and sauté until lightly browned.
  3. Add Herbs de Provence, Cajun spice, and cumin with the ground turkey. Cook while stirring over high heat, ensuring the turkey is cooked through (about 10 minutes).
  4. Add the remaining ingredients (white beans, tomatillos, green pepper, red pepper, canned tomatoes, green chilies, chicken stock, lime juice, cilantro, jalapeno, and beer) and simmer for 20 minutes to allow the flavors to blend beautifully.
  5. Taste and adjust seasoning with salt and pepper as needed. Add additional Cajun spice or hot sauce if you desire more heat.
  6. Serve this delicious Cajun Green Chili in a large bowl, generously topped with shredded cheese, fresh cilantro, and sliced green onions (optional).

Notes

If you prefer, you can use a full green pepper or a full red pepper instead of half of each. For an extra kick, leave some seeds in the jalapeño or add an additional one. This chili also tastes fantastic made a day ahead, allowing the flavors to deepen even further.
