This Spaghetti Pie Recipe is the perfect weeknight family meal that is easy to make, packed with protein from the beef and very filling.

  • 1 pound ground beef, browned and drained
  • 2 tbsp olive oil
  • 1/2 pound box spaghetti
  • 1 – 24 ounce tomato sauce
  • 8 ounces cottage cheese
  • 2 cups mozzarella cheese
  • 2 eggs
  • 1/3 cup Parmesan cheese
  • 1 tbsp margarine, melted

Instructions 

  • Preheat the oven to 350 degrees F (175°C).
  • Cook the spaghetti according to the package directions until al dente. Drain thoroughly and set aside.
  • Heat a large skillet over medium-high heat. Add 2 tablespoons of olive oil. Add the ground beef and brown it until fully cooked through, crumbling it with a spoon. Drain any excess fat from the skillet and set the beef aside.
  • In the same large skillet (or a clean one if preferred), combine the tomato sauce with the browned beef. Stir until well combined and let it simmer gently on low heat for 5 minutes, allowing the flavors to meld.
  • In a medium mixing bowl, whisk together the eggs, Parmesan cheese, and melted margarine (or butter). Add the cooked and drained spaghetti to this mixture and toss well to ensure the spaghetti is thoroughly coated.
  • Carefully transfer the egg-coated spaghetti mixture into a 9×13-inch baking dish, spreading it out evenly to form the base of the pie.
  • Spoon the cottage cheese over the spaghetti layer, spreading it evenly across the pasta.
  • Finally, spread the meat sauce evenly over the cottage cheese layer. Bake in the preheated oven for 30 minutes.
  • With about 5 minutes remaining on the baking time, remove the pie from the oven and evenly sprinkle the shredded mozzarella cheese over the top. Return to the oven and bake for another 5 minutes, or until the cheese is beautifully melted and bubbling. Remove from the oven, let it rest for a few minutes, then garnish with fresh chives or parsley if desired, and serve warm.
