Ingredients 

  • 1 pound of ziti pasta {you can sub penne or rigatoni}
  • 1 pound ground beef {or sausage or turkey}
  • 2 tablespoons olive oil
  • 3 garlic cloves, minced
  • 1 – 32 ounce jar of tomato sauce or make your own {see instructions to make your own}
  • 2 teaspoons Italian seasoning
  • 1/2 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1 cup of cottage cheese
  • 1 – 16 ounce tub of ricotta cheese, park-skim
  • 2 cups of mozzarella cheese, shredded, divided
  • 1/2 cup of Parmesan cheese
  • Fresh parsley and basil for garnish, chopped

Instructions 

  • Preheat oven to 350 degrees F (175 C).
  • Fill a large pot with water and bring to a boil. Add 2 teaspoons of salt. Add the pasta to the water and boil until the pasta is al dente (firm to the bite). Drain well, then drizzle with a little olive oil to prevent sticking and set aside in a large bowl.
  • In a large skillet, heat 2 Tablespoons olive oil over medium-high heat. Add the ground beef and cook, breaking it up with a spoon, until fully browned. Drain any excess fat, then return the beef to the skillet. Stir in the minced garlic and cook for 30 seconds until fragrant. Pour in the tomato sauce, Italian seasoning, salt, and pepper. Bring to a simmer, then reduce heat and let it simmer for 10 minutes to allow flavors to meld.
  • Pour the simmered meat sauce over the cooked pasta in the large bowl and mix well until all pasta is evenly coated.
  • In another medium bowl, combine the ricotta cheese, cottage cheese, and 1 cup of shredded mozzarella cheese. Mix thoroughly until well combined.
