This Dark Chocolate Raspberry Pie is the perfect dessert to share with your family and friends this holiday season.

Ingredients 

  • 1 1/2 cups graham cracker crumbs , {I used 12 graham crackers}
  • 1/4 cup sugar
  • 6 Tablespoons unsalted butter, melted
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 3 Tablespoons corn starch
  • 1/4 cup sugar
  • 1 Tablespoon dark chocolate cocoa powder
  • 2 cups whole milk
  • 3 egg yolks, beaten
  • 6 oz. dark chocolate, melted
  • 2 teaspoons vanilla extract
  • 2 – 6 oz. containers of fresh Driscoll’s Raspberries , {separated for the puree and garnish}
  • Powdered sugar
  • Fresh raspberries

Instructions 

  • Preheat the oven to 350 degrees F (175 degrees C).
  • In a food processor, pulse the graham cracker crumbs, sugar, melted butter, cinnamon, and salt until everything is thoroughly combined and resembles wet sand.
  • Press the graham cracker crumb mixture firmly and evenly into the bottom and up the sides of a 9-inch pie dish. Ensure it’s packed tightly to form a solid crust.
  • Bake the crust in the preheated oven for 10-11 minutes, or until the edges are golden brown. Remove from the oven and let it cool completely on a wire rack before adding the filling.
  • For the raspberry puree: Place 6 oz. of fresh raspberries in a fine-mesh strainer set over a bowl. Let them sit for 1-2 hours at room temperature, allowing them to soften. Once soft, gently press the raspberries through the mesh strainer with the back of a spoon to create a smooth raspberry puree. The strainer will catch the seeds. Discard the seeds and set the vibrant raspberry puree aside.
  • To make the pudding: In a large, heavy-bottomed pot, whisk together the corn starch, sugar, salt, and dark chocolate cocoa powder until well combined. Slowly whisk in the whole milk, ensuring no lumps. Bring the mixture to a boil over medium heat, continuously whisking until the pudding thickens significantly. This typically takes a few minutes once boiling.
  • In a separate bowl, lightly beat the egg yolks. To temper the egg yolks, slowly pour about half of the hot milk mixture into the beaten egg yolks while continuously whisking to prevent the eggs from scrambling. Once tempered, return the egg yolk mixture to the pot with the remaining milk mixture. Cook over low heat for another 3 minutes, stirring constantly.
  • Remove the pot from the heat. Whisk in the melted dark chocolate, vanilla extract, and the prepared raspberry puree until the pudding is entirely smooth, glossy, and beautifully combined.
  • Pour the warm pudding evenly into the cooled graham cracker pie shell. Cover the surface of the pie directly with plastic wrap to prevent a “skin” from forming. Chill the pie in the refrigerator for at least four hours, or preferably overnight, until it is completely set and firm.
  • Before serving, carefully remove the plastic wrap. Garnish your beautiful pie with the remaining 6 oz. of fresh raspberries, a few delicate shavings of dark chocolate, and a light dusting of powdered sugar for a truly elegant finish.
