  • 1 small Beet, peeled and diced
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper

For the hummus:

  • 1 seasoned roasted beet
  • 1 can of chickpeas, drained and rinsed (15oz)
  • 2 tablespoons tahini
  • juice of 1 lemon
  • 1 to 2 garlic cloves
  • 1/4 cup extra virgin olive oil
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
