  • 3 tablespoons olive oil
  • 1/2 cup sweet onion, chopped
  • 3 cloves garlic , finely chopped
  • 12 ounces sweet Italian sausage, cut into rounds (or removed from casings)
  • 8 ounces orecchiette pasta , {for a healthier dish, consider whole wheat pasta}
  • 3 cups vegetable broth , or chicken broth
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon red chili flakes , optional, for a hint of spice
  • 3 cups arugula , {or your preferred greens like spinach or kale}
  • 1 cup broccoli florets, chopped {for a bolder flavor, consider broccoli rabe}
  • 1 can chickpeas, drained and thoroughly rinsed
  • 1/2 cup parmesan cheese, freshly grated for best flavor
  • Salt and pepper to taste
  • Extra Parmesan cheese for serving

Add the sweet Italian sausage (removed from casings and crumbled, or cut into rounds) and sauté for an additional 2-3 minutes, breaking it apart with a spoon until browned.
  • Next, add the orecchiette pasta, vegetable broth (or chicken broth), dried basil, dried oregano, and the optional red chili flakes for a touch of spice. Give everything a good stir to combine. Bring the liquid to a rolling boil, then reduce the heat to a gentle simmer. Cover the pot with a tight-fitting lid and allow it to cook for 4 minutes. After 4 minutes, remove the lid, add the broccoli florets, stir them into the pasta, cover again, and continue to simmer for another 5 minutes.
