- 2 Tablespoons olive oil
- 1/2 sweet onion, chopped
- 2 cloves garlic , minced
- 1 pound Certified Angus Beef ground beef
- 2 Tablespoons taco seasoning
- 1/2 cup salsa
- 1 can fire roasted diced tomatoes
- 1 can corn, drained and rinsed
- 2 cups beef broth , {or broth of your choice}
- 8 ounces pasta , {small to medium pastas like elbow, rotini, or shells work best}
- 1 1/2 cups sharp cheddar cheese, shredded
- Cherry tomatoes, cut in half, for garnish
- Red onion, diced, for garnish
- Fresh cilantro, chopped, to garnish
- Green onions, chopped, to garnish
- Sour cream, to garnish
- Extra cheese, shredded, to garnish
Instructions

In a large, deep skillet or Dutch oven, heat the 2 Tablespoons of olive oil over medium heat. Add the chopped sweet onion and minced garlic, sautéing for about 2 minutes until the onion softens and becomes translucent.

Add the Certified Angus Beef ground beef to the skillet. Cook, breaking up the beef with a large spoon, until it is thoroughly browned and no longer pink. Drain any excess fat if necessary.

Stir in the taco seasoning, salsa, fire-roasted diced tomatoes (undrained), drained and rinsed corn, beef broth, and the uncooked pasta. Mix everything well to ensure the pasta is mostly submerged in the liquid.

Bring the mixture to a boil over medium-high heat. Once boiling, reduce the heat to low, cover the skillet, and let it simmer for 10 to 12 minutes, or until the pasta is al dente (cooked through but still firm to the bite) and most of the liquid has been absorbed. Stir occasionally to prevent sticking.

Remove the lid and add the shredded sharp cheddar cheese. Stir gently to combine the cheese into the pasta mixture until it begins to melt and create a creamy sauce.

Remove the skillet from the heat and let it sit, uncovered, for 1 to 2 minutes. This allows the remaining cheese to fully melt and the sauce to thicken slightly.
