Why Ground Pork is Perfect for Stir-Fries
If you’re new to cooking with ground pork, this recipe is your perfect introduction. Ground pork is a fantastic protein choice for stir-fries because it cooks quickly and readily absorbs the bold flavors of the sauce and aromatics. Its slightly higher fat content than ground chicken or turkey also contributes to a more tender and flavorful outcome, making your stir-fry richer and more satisfying. I’ve previously featured this versatile ingredient in hearty recipes like this Instant Pot Pork Chili and a comforting Slow Cooker Pork Posole, both of which demonstrate just how much depth and taste ground pork can bring to a dish.

Key Ingredients for Your Easy Thai Pork Stir-Fry
Crafting this flavorful Thai Pork Stir-Fry is surprisingly simple, thanks to a carefully selected list of accessible ingredients. Each component plays a vital role in building the dish’s distinctive sweet, spicy, and savory profile. Below is an overview of what you’ll need; for precise measurements and a printable recipe card, please scroll down to the full recipe section.
- Ground Pork: The star of our show! Ground pork provides a rich, savory base that cooks up quickly and evenly, making it ideal for stir-frying. While we highly recommend it for its authentic flavor, you have flexibility here. Feel free to substitute with other ground meats such as lean ground chicken, ground beef, or ground turkey for a different protein profile.
- Sweet Onion: A finely chopped sweet onion forms the aromatic foundation, releasing a gentle sweetness and depth of flavor as it sautés. If sweet onions aren’t available, shallots offer a milder, more delicate alternative, or a red onion can provide a sharper, more pungent kick.
- Fresh Garlic Cloves: There’s no substitute for the pungent, aromatic punch of fresh garlic. Minced garlic cloves are essential for that classic stir-fry aroma and flavor. While garlic powder can be used in a pinch (about 1/2 teaspoon of powder for every fresh clove), fresh is always preferred for the best taste.
- Vibrant Vegetables: This stir-fry bursts with color and nutrition from matchstick carrots, providing a touch of sweetness and crunch; crisp bell peppers (any color works beautifully), adding a fresh, slightly sweet note; and tender bok choy, which wilts perfectly into the sauce. Don’t hesitate to customize! Other excellent additions include green beans, broccoli florets, sliced celery, snow peas, or even thinly sliced zucchini. The more vegetables, the merrier!
- Fresh Lime Juice: A squeeze of fresh lime juice is crucial for balancing the rich, spicy, and sweet flavors of the sauce. It introduces a bright, zesty acidity that elevates the entire dish, preventing it from tasting heavy. Always opt for fresh lime juice over bottled for the best flavor.
- Freshly Grated Ginger: The warm, spicy, and fragrant notes of fresh ginger are non-negotiable for an authentic Thai stir-fry experience. Grating it fresh releases its potent oils, infusing the dish with an incredible aroma. If fresh ginger is truly unavailable, ground ginger can be used sparingly, though the flavor profile will be less vibrant.
- Soy Sauce: This provides the fundamental savory, umami depth for our stir-fry sauce. For healthier eating and to better control the sodium content, I recommend using a low-sodium soy sauce. Tamari is an excellent gluten-free alternative if needed.
- Red Chili Garlic Sauce: For that signature sweet and spicy kick, red chili garlic sauce (like Huy Fong’s) is perfect. It offers a balanced heat with garlicky undertones. Adjust the amount to your preference – a little for mild warmth, more for a fiery experience. If you prefer no heat, you can omit it entirely, or use a sweet chili sauce for flavor without the spice.

Customizing Your Thai Pork Stir-Fry: Endless Possibilities
One of the joys of cooking stir-fries is their incredible adaptability. This Easy Thai Pork Stir-Fry recipe is a fantastic canvas for culinary creativity, allowing you to tailor it to your taste, what’s in season, or what you have on hand. Here are some fantastic ways to modify and enhance your dish:
- Boost Your Veggies: My personal philosophy for any stir-fry is “the more vegetables, the better!” Don’t limit yourself to just the ones listed. Consider adding thinly sliced zucchini, diced eggplant, crisp celery, or even cherry tomatoes for extra juiciness and color. For a subtle earthy flavor, throw in some sliced mushrooms. Edamame or snap peas are also excellent choices for added texture and sweetness. This is a wonderful way to sneak more nutrients into your meal!
- Protein Power-Ups: While ground pork is delicious, feel free to experiment with other proteins. If you’re feeling adventurous and want to introduce a different flavor profile, try incorporating half a pound of ground Italian sausage alongside or instead of the ground pork. The fennel and spices in Italian sausage can add a delightful twist. Cubed chicken breast, thinly sliced beef, or even shrimp can also be stir-fried in a similar manner.
- Crank Up the Heat: For those who love a fiery kick, there are many ways to escalate the spice level. Increase the amount of red chili garlic sauce, or add freshly sliced chili peppers (like bird’s eye chilies), diced jalapeños, a dash of your favorite hot sauce, or a generous sprinkle of crushed red pepper flakes during cooking. Remember to taste as you go to hit your perfect level of spice!
- Umami Boost with Mushrooms: If you’re a mushroom enthusiast, they are an absolutely fantastic addition. Sliced cremini, shiitake, or even oyster mushrooms will absorb the stir-fry sauce beautifully and add a wonderful savory depth and meaty texture. Sauté them with the other vegetables until tender.
- Herbaceous Additions: Fresh herbs are key in Thai cuisine. Beyond cilantro for garnish, consider stirring in some fresh basil leaves (especially Thai basil if you can find it) at the very end of cooking for a burst of aromatic flavor. Mint can also offer a surprising, refreshing counterpoint.
- Nutty Crunch: For an extra layer of texture and richness, sprinkle some chopped roasted peanuts or cashews over the top just before serving. They add a delightful crunch and nutty flavor that complements the sauce beautifully.

Crafting Your Easy Thai Pork Stir-Fry: A Step-by-Step Guide
Creating this delicious and quick Thai Pork Stir-Fry is incredibly straightforward. Follow these simple steps to bring this flavorful dish to life in your kitchen. Efficiency is key here, so having your ingredients prepped and ready before you start cooking is highly recommended – this is known as “mise en place” and is essential for successful stir-frying!
Preparation and Cooking Steps:
Step 1: Prepare Your Base (Cook the Rice/Noodles)
Start by preparing your preferred accompaniment. Cook white or brown rice according to its package instructions, ensuring it’s ready to absorb all the wonderful stir-fry flavors. If you opt for rice noodles, follow their specific cooking directions, usually involving a quick soak in hot water, then drain and set aside. Having this ready beforehand ensures your stir-fry goes from pan to plate without delay.
Step 2: Begin the Sauté – Aromatics and Early Vegetables
While your rice or noodles are cooking, heat 2 tablespoons of olive oil (or a high-smoke point oil like canola or peanut oil) in a large skillet or wok over medium-high heat. Once shimmering, add the chopped sweet onion and sauté for about 2 minutes until it starts to soften and become fragrant. Next, introduce the minced garlic and diced bell peppers. Continue to sauté for another 2 minutes, allowing the garlic to release its aroma and the peppers to begin to soften slightly, but still retain a pleasant crispness. Ensure you don’t overcrowd the pan; if necessary, cook in batches to maintain high heat and achieve proper sautéing.
Step 3: Cook the Pork & Build the Flavorful Sauce
Now, add the ground pork and matchstick carrots to the skillet. Break up the pork with a spoon and continue to sauté, stirring occasionally, until the pork is thoroughly browned and cooked through, which typically takes about 6-8 minutes. Drain any excess fat if desired, though a little fat adds to the flavor. Once the pork is cooked, pour in the fresh lime juice, grated ginger, soy sauce, and red chili garlic sauce. Stir everything together well, scraping up any browned bits from the bottom of the pan to incorporate all the flavor. Finally, mix in the bok choy (or your chosen leafy green). Simmer for just about 2 minutes, or until the bok choy has wilted but still retains a vibrant green color and a slight crunch. Season with salt and freshly ground black pepper to taste. If you desire extra heat, this is the time to sprinkle in some crushed red pepper flakes.
Step 4: Garnish and Serve Immediately
To finish, remove the stir-fry from the heat. Garnish generously with freshly chopped cilantro, sliced green onions, and a sprinkle of sesame seeds for added flavor and visual appeal. For an extra layer of crunch, consider adding crushed peanuts. Serve your vibrant Easy Thai Pork Stir-Fry immediately over your prepared bed of rice, alongside rice noodles, or as a fresh, light filling in crisp lettuce wraps. Enjoy this quick, flavorful, and incredibly satisfying meal!

- 1 cup sweet onion, chopped {about 1/2 of a medium onion}
- 3 garlic cloves, minced
- 1 bell pepper, seeds removed, diced
- 1 cup matchstick carrots
- 3 cups bok choy {or green of your choice}
- 2 teaspoons lime juice
- 2 tablespoons freshly grated ginger
- 2 tablespoons soy sauce
- 2 teaspoons red chili garlic sauce {I use Huy Fong, Chili Garlic Sauce}, more or less for spiciness
- Salt and pepper to taste
Garnish:
- Freshly chopped cilantro
- Chopped green onion
- Sesame seeds
- Peanuts

Cook the rice according to the package and set aside. While the rice cooks heat the 2 Tablespoons olive oil in a large skillet and add the onion, sautéing for 2 minutes. Add the garlic and the bell peppers and continue to sauté for 2 more minutes.
-
Add the ground pork and the matchstick carrots and continue to sauté until the pork is browned, about 6-8 minutes. Add the fresh lime juice, ginger, soy sauce, chili garlic sauce and stir. Mix in the bok choy {or green of your choice} and simmer until the bok choy is wilted, about 2 minutes.

Add salt and pepper to taste along with crushed red pepper if you like a little spice. Garnish with fresh cilantro, chopped green onion and sesame seeds.
-
Serve over a bed of your favorite rice, with rice noodles or even in a lettuce wrap.
Notes
- Vegetable Versatility: This stir-fry is incredibly forgiving when it comes to vegetables! Feel free to incorporate any of your favorites or what you have on hand. Excellent additions include sliced mushrooms for umami, tender zucchini, sweet cherry tomatoes, crisp broccoli florets, or even snow peas. Adjust cooking times based on the vegetables you choose, adding harder vegetables earlier and softer ones later.
- Greens Galore: While bok choy is a fantastic choice for its delicate texture and mild flavor, don’t hesitate to use other greens. Spinach, Napa cabbage, or even kale (if you prefer a heartier green) can work beautifully. Just ensure they are added towards the very end of cooking, as they wilt quickly.
- Adjusting the Heat: For a spicier kick, simply increase the amount of red chili garlic sauce to your preference. A pinch of crushed red pepper flakes stirred in at the end can also provide an extra burst of heat. If you prefer a milder dish, reduce the chili garlic sauce or omit it entirely and perhaps add a touch more sweet chili sauce for flavor.
- Protein Swaps: If you don’t have ground pork, ground chicken, ground turkey, or even thinly sliced beef or shrimp are excellent alternatives. Adjust cooking times as needed for different proteins.
- Aromatic Boost: For an even deeper flavor, consider adding a splash of fish sauce alongside the soy sauce in the stir-fry mixture. This provides an authentic Thai umami depth.
