Making this incredible pork roast in your Instant Pot is surprisingly simple, resulting in perfectly tender meat with minimal effort. Follow these steps for a delicious outcome:
Step 1: Prepare the Marinade: Begin by placing your cut pork roast pieces into a large, sturdy ziplock bag. In a separate mixing bowl, whisk together your chosen marinade ingredients. If using Goya Marinade, simply pour it in. If making your own Mojo, combine the fresh orange juice, lime juice, orange zest, lime zest, olive oil, diced onion, minced garlic, oregano, cumin, bay leaves, salt, and pepper.
Step 2: Marinate the Pork for Maximum Flavor: Pour the prepared marinade over the pork pieces in the ziplock bag. Seal the bag tightly, ensuring all air is expelled, and gently massage the marinade around the meat to coat every piece thoroughly. - 1 4 pound pork shoulder, butt boneless roast with fat (don’t remove the fat), cut into 4 to 5 large pieces.
- 1 1/2 cups goya marinade – naranja agria
For the homemade mojo marinade (if not using Goya):
- 3/4 cup fresh squeezed orange juice
- 1/2 cup fresh lime juice
- Zest of one orange
- Zest of one lime
- 1/2 cup olive oil
- 1/2 large yellow onion, diced
- 8 garlic cloves, minced
- 2 teaspoons oregano
- 2 teaspoons ground cumin
- 2 bay leaves
- 3/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup cilantro, chopped
Instructions

Place pork roast pieces into a large ziplock bag.
In a mixing bowl, combine the Goya Marinade or the orange juice, lime juice, and zest, with the olive oil, onion, garlic, oregano, cumin, bay leaves, salt and pepper. -
Pour marinade over the roast and seal the ziplock bag and gently shake the marinade around the entire meat.

If you are planning on cooking the meat right away, allow it to sit on the counter and marinate in the sealed bag for at least 1 hour. It is best to place in the refrigerator and marinade overnight.

Pour meat and marinade into the instant pot. Seal the lid and set on meat for 60 minutes.

When the timer goes off, allow it to rest and slow release for 30 minutes. This will help the meat stay moist and tender. Remove the meat and shred, removing any fatty pieces.

Remove a cup or more of the juice and serve it over the meat. Serve over Cuban yellow rice or in tacos, or with your favorite vegetable side dish.
