Ingredients 

  • 2 Tablespoons olive oil
  • 1/2 sweet onion, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 2 garlic , minced
  • 1 lb. andouille sausage, chopped
  • 3 teaspoons Cajun seasoning
  • 1 teaspoon Old Bay
  • 1 can fire roasted diced tomatoes
  • 2 Tablespoons tomato paste
  • 3 cups chicken broth
  • 1/4 cup cream
  • 8 oz. penne pasta {, or pasta of your choice}
  • 1/4 cup parsley, freshly chopped
  • Salt and pepper to taste

Instructions 

  • In a large pot heat the olive oil over medium high heat. Add the onion, red bell pepper, yellow bell pepper, garlic, sausage, 2 teaspoons Cajun seasoning and 1 teaspoon Old Bay.
  • Sauté for about 8 minutes, until the sausage is browned and the peppers and onion are soft.
  • Add the remaining 1 teaspoon Cajun seasoning, fire roasted tomatoes, tomato paste, chicken broth, 1/4 cup cream, 8 oz. penne pasta and bring to a boil.
  • Cover and turn down heat to medium low and simmer for 13-15 minutes or until the pasta is cooked.
  • Stir in the freshly chopped parsley and salt and pepper to taste.
  • Serve warm with crusty bread to soak up all those good juices!

  • You can use any color bell pepper you would like. Mixing colors adds visual appeal and a slightly different flavor profile.
  • For those who love extra heat, consider adding a finely diced jalapeño or a pinch of cayenne pepper with the other seasonings.
