  • 2 large bananas, peeled and cut into 1/2 inch thick slices
  • 1 1/2 cups dark chocolate chips , {you can use milk or semi-sweet instead}
  • 1 teaspoon vanilla extract
  • 1/3 cup shredded coconut, sweetened

Instructions 

  • Line a baking sheet with parchment paper. Make sure your baking sheet will fit comfortably in your freezer. You might need to use two smaller sheets depending on your freezer size. This step is crucial for easy removal of the frozen bites.
  • To melt the chocolate, set up a double boiler. Fill the bottom pot with a few inches of water and bring it to a simmer over medium heat. Place the chocolate chips in the top of the double boiler (or a heat-proof bowl that fits snugly over the simmering water without touching it). Remove the bottom pot from the heat and place the top pot/bowl with chocolate over it. Stir continuously until the chocolate chips are completely melted and smooth. Alternatively, you can microwave the chocolate chips in 30-second intervals, stirring between each, until melted.
