Ingredients 

  • 6 cups cauliflower, one 3lb. head of cauliflower
  • 1 Tbsp. olive oil
  • 1/4 cup Parmesan cheese, shredded
  • 1/4 cup butter
  • 3 garlic cloves, finely chopped
  • 2/3 cup slivered almonds
  • 2/3 cup panko bread crumbs

Instructions 

  • Preheat oven to 425°F (220°C).
  • Clean the cauliflower by pulling the leaves off the base and cutting away the stem.
  • Cut the cauliflower into 4 sections, then slice each section into 6-7 pieces, depending on your desired size. Rinse the cauliflower and lay on a paper towel to dry (you may want to use a second paper towel to help pat it dry thoroughly).
  • Place the cauliflower in a large mixing bowl and toss with 1 Tbsp. olive oil. Roast in the oven for 20 minutes, tossing once halfway through the cooking process for even browning.
  • Sprinkle the roasted cauliflower with Parmesan cheese and continue to roast for 5 more minutes, then remove from the oven.
  • While the cauliflower roasts, melt 1/4 cup butter in a large skillet. Stir in the finely chopped garlic and sauté for about 20 seconds until fragrant.
