Ingredients 

For the Hazelnut Vinaigrette:

  • 3 Tablespoons hazelnut oil
  • 1 Tablespoon olive oil
  • 3 Tablespoons white balsamic vinegar
  • Pinch salt and pepper

For the Spicy Chicken:

  • 1 Tablespoons Olive Oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper
  • 2 large chicken breasts

For the Salad Assembly:

  • 2 Nectarines, quartered
  • 1/2 cup Gorgonzola, crumbled
  • 1/2 cup pecans, honey roasted
  • 8 cups romaine lettuce, roughly shredded

Instructions 

  1. In a small bowl, prepare the dressing by whisking together the hazelnut oil, olive oil, white balsamic vinegar, and a pinch of salt and pepper until well combined. Set aside.
  2. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
  3. Season the two large chicken breasts (with any visible fat trimmed off) generously on both sides with salt, black pepper, and cayenne pepper.
  4. Carefully place the seasoned chicken breasts in the hot skillet. Brown each side for approximately two minutes, creating a nice crust. Then, reduce the heat to medium, cover the pan, and allow the chicken to cook through completely, which typically takes about 15 minutes, or until an internal temperature of 165°F (74°C) is reached.
  5. While the chicken is cooking, prepare your fresh ingredients: slice the nectarines into bite-sized chunks.
  6. Wash and roughly shred the romaine lettuce, and crumble your Gorgonzola cheese.
  7. Once the chicken is fully cooked, remove it from the skillet and let it rest on a cutting board for about five minutes. This allows the juices to redistribute, ensuring a tender and flavorful slice. After resting, slice the chicken into desired pieces.
  8. To assemble your vibrant salad: arrange the shredded romaine lettuce on serving plates, then top with the sliced nectarines, crumbled Gorgonzola, honey-roasted pecans, and the warm, sliced chicken. Drizzle generously with the prepared hazelnut vinaigrette. Serve immediately and enjoy every fresh bite!
