One of my all-time favorite ways to enjoy a pita wrap is with juicy, flavorful steak, and these Mediterranean Steak Pita Wraps with Mint Yogurt Sauce truly hit the mark. The secret to the incredible tenderness and depth of flavor in this recipe lies in the overnight yogurt marinade. Yogurt acts as a natural tenderizer thanks to its lactic acid, which gently breaks down the meat fibers without making the steak mushy, as some acidic marinades can. This process not only ensures a remarkably tender bite but also allows the aromatic spices and herbs in the marinade to deeply penetrate the flank steak, infusing it with an authentic Mediterranean essence.

Flank steak is an excellent choice for this recipe due to its rich beefy flavor and ability to absorb marinades beautifully. When grilled to perfection and sliced against the grain, it becomes incredibly tender and succulent. The steak then pairs harmoniously with two essential components: a zesty lemon hummus spread and a refreshing mint yogurt sauce. WHAT INGREDIENTS ARE IN THIS STEAK PITA WRAP?

  • 1 lb. flank steak

  • 2 large pita breads {or 4 small pitas}

  • 1/4 cup lemon hummus

  • 1/2 cup fresh tomato, diced

  • 1/4 cup fresh parsley, stems removed, leaves chopped

  • Hot sauce {optional garnish}

For the yogurt marinade:

  • 1 cup plain yogurt, low fat

  • 1 Tablespoon honey

  • 1 Tablespoons fresh mint, chopped

  • 2 Tablespoons olive oil

Mediterranean Steak Pita Wraps with Mint Yogurt Sauce

Mediterranean Steak Pita Wraps with Mint Yogurt Sauce adds protein and flavor to your lunch or Memorial Day BBQ.

Ingredients

  • 1 lb. flank steak
  • 2 large pita breads , {or 4 small pitas}
  • 1/4 cup lemon hummus
  • 1/2 cup tomato, diced
  • 1/4 cup parsley, stems removed, leaves chopped
  • Hot sauce , {optional garnish}
  • 1 cup yogurt, low fat
  • 1 Tablespoon honey
  • 1 Tablespoons mint, chopped
  • 2 Tablespoons olive oil
  • 1/4 cup yogurt, low fat
  • 1/2 teaspoon honey
  • 3 Tablespoons mint, chopped
  • Salt and pepper to taste

Instructions

  • Put the flank steak on a large platter and season each side with a pinch of salt and cracked pepper.
  • In a large ziplock bag put the marinade ingredients: 1 cup plain yogurt, honey, mint and olive oil. Place the flank steak in the ziplock bag and seal tight. Shake the bag so that the steak is covered with the marinade. Refrigerate overnight if possible or at least 2 hours.
  • When you are ready to make your pitas preheat the grill for 5 minutes. Then turn the heat to medium and place the steak on the grill, close the grill and let cook for 10 minutes.
  • Using tongs flip the steak and let cook for another 5-10 minutes, or until your steak reaches the desired temperature in relation to how you like your steak cooked {we do medium rare which is 130-135 F or medium which is 135-140 F}.
  • While the steak cooks lay your 2 pitas on a large cutting board or platter. Spread the lemon hummus on one side of each pita and set aside.
  • Once the steak is done cooking, remove from the grill and cut into strips {aways cut diagonally, against the grain, to make your steak tender.}.
  • Lay half of the steak on top of the lemon hummus on each pita. Drizzle the mint yogurt dressing over the steak and garnish with fresh tomatoes and parsley. Garnish with hot sauce if you would like.

Notes

  • This recipe makes enough steak for two large pita wraps {what I have pictured} or four small pita wraps {usually the thicker, smaller pita}.
  • I suggest adding some hot sauce to the finished pita wrap for extra spice!
  • Instead of the fresh tomato and parsley you could easily throw some tabbouleh on these pita sandwiches if you have it.
