Skillet Beef Lasagna is a hearty, protein packed Italian meal you can make in one skillet meaning less clean-up. This easy and quick lasagna is perfect for busy weeknights and a guaranteed family favorite!

Ingredients 

  • 1 pound ground beef, browned and drained
  • 3 Tablespoons olive oil, divided
  • 1/4 cup onion, diced
  • 4 cloves garlic , minced
  • 2 cans tomato sauce
  • 1 can diced tomatoes
  • 8 ounces lasagna noodles, uncooked, broken
  • 1 cup cottage cheese
  • 1 cup mozzarella cheese, shredded
  • 1 cup ricotta cheese
  • parsley , and basil, for garnish

Instructions 

  • In a large, deep skillet (preferably oven-safe), heat 2 Tablespoons of olive oil over medium-high heat. Add the ground beef and sauté, breaking it apart with a spoon, until it is fully browned. Once cooked, drain any excess fat from the skillet.
  • Add the remaining 1 Tablespoon of olive oil to the skillet. Stir in the diced onion and minced garlic, and sauté for about 2 minutes until fragrant and the onion has softened slightly. Return the browned ground beef to the skillet.
  • Pour in the tomato sauce and diced tomatoes. Stir well to combine. Gently break the lasagna noodles into smaller, manageable pieces and add them to the skillet. Make sure all the noodles are submerged completely under the sauce to ensure even cooking. Stir in the cottage cheese.
  • Cover the skillet tightly with a lid and reduce the heat to a simmer. Let it cook for 20-25 minutes, or until the lasagna noodles are tender and fully cooked. Check occasionally to ensure there’s enough liquid; if the sauce reduces too quickly, you may need to add a small amount of water or beef broth (about 1/4 cup at a time) halfway through cooking to prevent sticking and ensure the noodles cook properly.
  • Once the noodles are cooked, remove the lid. Add dollops of ricotta cheese evenly around the skillet. Sprinkle the shredded mozzarella cheese generously over the top of the lasagna. If your skillet is oven-safe, you can place it under the broiler for 2-3 minutes until the cheese is bubbly and golden brown. Otherwise, simply cover it again for a few minutes until the mozzarella is melted and gooey.
