Ingredients 

For the slow cooker shredded beef

  • 2 tablespoons vegetable oil
  • 2 pounds beef chuck roast, fat trimmed
  • 1 – 16 ounce jar of salsa
  • 2 garlic cloves, minced
  • 1/2 of a sweet onion, diced
  • 1 teaspoon cumin
  • Salt and pepper, to taste

For the loaded nachos

  • 1 bag of thick tortilla chips, approx. 10-12 oz
  • 1 – 15 ounce can of black beans, drained and rinsed (add taco seasoning if desired)
  • 1 1/2 cups sharp cheddar cheese, shredded
  • 1 1/2 cups pepper jack cheese, shredded

For the fresh toppings (after baking)

  • 1 large tomato, diced
  • 1 cup pico de gallo (or any salsa you desire)
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup green onions, chopped
  • 1 jalapeno, sliced (seeds removed for less heat, if desired)
  • Sour cream to drizzle {optional}
  • 1/4 of a red onion, diced (optional, for extra crunch)

Instructions 

For the slow cooker shredded beef:

  • Heat the 2 tablespoons of vegetable oil in a large skillet or Dutch oven over medium-high heat. Pat the chuck roast dry with paper towels and sprinkle generously with salt and pepper on all sides.
