I’m thrilled to be partnering with the Ohio Beef Council to bring you this incredibly simple, yet utterly mouthwatering Beef Taco Dip Recipe. It’s perfect for any occasion, not just holidays.

This Mexican-style dip is a staple in my kitchen, and for good reason! It’s not only a fantastic appetizer but also doubles as a hearty, protein-packed meal for your family. Serve it warm with a generous scoop of tortilla chips, alongside fresh veggie sticks for a lighter option, or even over a bed of brown rice for a complete and satisfying dinner. The rich, savory beef combined with creamy beans and spicy salsa makes for an irresistible combination that will have everyone coming back for more.

Cooking with beef is straightforward, but a few key tips can elevate your dishes and ensure both deliciousness and safety. Whether you’re making this taco dip or another beef creation, keep these pointers in mind:

  • Always have ground beef on hand? It’s incredibly versatile and perfect for celebrating Taco Tuesday! To ensure safety and optimal flavor, always let frozen ground beef thaw safely in the refrigerator for at least 12 hours or overnight. When cooking, aim for an internal temperature of 160°F. Remember, color is not a reliable indicator of ground beef’s doneness – always use a meat thermometer for accuracy to prevent foodborne illnesses and ensure your beef is cooked perfectly. Break up the beef as it browns for an even texture throughout your dip.
  • Planning to use a skillet to prepare beef for your Cinco de Mayo fiesta or any meal? The cooking time will vary depending on the cut and your desired doneness. For ground beef, brown it until no pink remains. For other cuts like steak strips for fajitas or a more gourmet dip, refer to a handy guide to learn how long each cut of beef should be cooked to achieve perfection. Celebrate Cinco de Mayo or any occasion with this quick and easy Beef Taco Dip Recipe. Simple taco-inspired ingredients combine to create a flavor-packed, creamy appetizer that’s perfect for sharing.

Ingredients

  • 2 Tablespoons olive oil
  • 1 pound ground beef
  • 1 can diced tomatoes
  • 1 can refried beans , {or you can use regular black beans for a less creamy dip}
  • 16 ounce salsa
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 2 cups sharp cheddar , shredded, divided (or pepper jack cheese)
  • cilantro, for garnish {optional}
  • green onion , for garnish {optional}

Instructions

  • Preheat the oven to 350 degrees F (175°C).
  • Heat the 2 Tablespoons of olive oil over medium heat in a large skillet. Add the ground beef and cook until thoroughly browned, breaking it apart with a spoon as it cooks. Once cooked, drain any excess fat and transfer the beef to a large mixing bowl.
  • To the mixing bowl with the beef, add the diced tomatoes (undrained), refried beans (or mashed black beans), salsa, chili powder, cumin, and ½ cup of the shredded cheese. Stir all ingredients together until they are well combined and the mixture is uniform.
  • Spread the flavorful beef taco mixture evenly into a large non-stick skillet or a cast iron skillet (approximately 10-12 inches). Ensure the surface is level. Top the mixture generously with the remaining 1 ½ cups of shredded cheese.
  • Bake in the preheated oven for 15 minutes, or until the cheese is beautifully melted, bubbly, and slightly golden brown around the edges. This indicates that the dip is heated through and ready to enjoy.
  • Once out of the oven, garnish your warm beef taco dip with fresh cilantro, thinly sliced green onion, and diced fresh tomato for added color and freshness. Serve immediately with your favorite tortilla chips or dippers.
