Maroulosalata is a classic Greek lettuce salad. The deliciously crunchy salad is made with finely chopped romaine lettuce, green onions, fresh dill and mint, dressed in a vibrant lemon and garlic salad dressing.

Ingredients 

  • 2 hearts romaine lettuce, chopped
  • 5-6 green onions, white and green parts chopped
  • 1 small bunch fresh dill, chopped
  • 1/4 cup fresh mint, chopped
  • 4 ounces crumbled feta cheese, divided

Maroulosalata Dressing:

  • 1/2 cup extra virgin olive oil
  • 1 large lemon, juiced
  • 1 clove garlic, minced
  • 1 teaspoon dried oregano
  • 2 ounces crumbled feta cheese
  • 1/4 teaspoon sea salt
  • 1/8 teaspoon black pepper

Instructions 

  • In a large mixing bowl combine the romaine lettuce, green onions, fresh dill, mint and mix well.
  • In a blender combine create the dressing by mixing the olive oil, lemon juice, garlic, oregano, feta cheese, salt and pepper and puree until smooth. Taste and adjust seasoning. Pour into a mason jar or salad dressing container.
  • Pour the dressing over the salad and gently toss.
  • Add the feta cheese and lightly toss. Serve or store the leftovers in an airtight container for up to 3 days.

  • If you are making this ahead of time I would leave the dressing off the salad until you are ready to serve as it can get soggy.
