Slow Cooker Turkey Quinoa Chili is hearty, healthy and cooks all day in your crockpot!

Ingredients 

  • 1 lb. ground turkey
  • 1/2 sweet onion, chopped
  • 4 garlic cloves, minced
  • 4 oz. diced chiles
  • 1 can diced tomatoes
  • 1 can black beans, drained and rinsed
  • 1 can hominy, drained and rinsed
  • 2 Tablespoons tomato paste
  • 1 teaspoon cocoa powder
  • 2 Tablespoons chili powder
  • 2 teaspoon cumin
  • 1 teaspoon coriander
  • 1/4 teaspoon cayenne pepper, {optional}
  • 1 teaspoon paprika
  • 1 teaspoon oregano
  • 2 cups quinoa, cooked
  • Cilantro, optional, for garnish
  • Cheese, optional, for garnish
  • Sour Cream, optional, for garnish
  • Green Onion, optional, for garnish

Instructions 

  • Cook the ground turkey in a media skillet over medium heat until the turkey is golden brown and cooked through. Add it to the slow cooker along with all of the other ingredients.
  • Cook on low for 4 hours.
  • While the chili cooks, cook the quinoa according to the package.
  • When the chili is ready to serve put a scoop of quinoa in the bottom of a bowl and top with chili and your favorite garnishes like cilantro, cheese, sour cream and green onion.

Notes

  • This chili freezes nicely. I would freeze it without the quinoa in it and just make the quinoa when you are ready to eat the chili.
  • You can use beef in this recipe or leave the meat out all together.
  • Try a different variety of beans like red kidney beans and chickpeas.
