Slow Cooker Stuffed Pepper Soup takes the stuffed peppers you know and love and puts it into a soup.

Ingredients

  • 2 tablespoons olive oil
  • 1 lb. ground turkey
  • 1/2 large sweet onion, chopped
  • 4 garlic cloves, minced
  • 1 medium red bell pepper, seeds removed, chopped (about 1 cup)
  • 1 medium green bell pepper, seeds removed, chopped (about 1 cup)
  • 1 (14.5) ounces can of diced tomatoes
  • 1 (15) ounces can of tomato sauce
  • 4 cups chicken broth (or vegetable broth)
  • 1 teaspoon dried basil
  • 1/4 teaspoon dried thyme
  • 1/4 teaspoon cayenne red pepper (optional)
  • 1/2 teaspoon dried oregano
  • 1 1/2 cups brown rice, cooked (uncooked quantity)
  • 1/2 cup fresh parsley, stems removed, chopped

Instructions

  • Heat the 2 tablespoons of olive oil in a large skillet over medium-high heat. Add the ground turkey and cook for 2 minutes, breaking it apart with a spoon. Then, add the chopped onion and minced garlic, continuing to cook until the turkey is fully browned and cooked through, and the onion is softened.
  • Transfer the cooked ground turkey mixture to your slow cooker. Add the chopped bell peppers (red and green), diced tomatoes, tomato sauce, chicken broth (or vegetable broth), dried basil, dried thyme, optional cayenne red pepper, and dried oregano. Stir all the ingredients well to combine. Cover the slow cooker and cook on low for 5-6 hours, or on high for 3 hours, until the peppers are tender and the flavors have melded beautifully.
  • Once the soup is done cooking and you are ready to serve, stir in the separately cooked brown rice and the fresh chopped parsley. Give it a final stir to incorporate everything, then ladle into bowls and serve warm.
