  • 1 lemon, juiced
  • 1/3 cup tahini
  • 2 cloves garlic
  • 3 tablespoons extra virgin olive oil , {you may want more for thinner hummus}

For the Beef:

  • 1 pound ground beef, {I use 80/20}
  • 1 tablespoon extra virgin olive oil
  • 1/4 sweet onion, chopped
  • 2 cloves garlic , minced
  • 1 teaspoon cinnamon
  • 1 teaspoon cumin
  • 1/4 teaspoon cayenne pepper
  • 1/4 teaspoon paprika
  • 1/4 teaspoon cloves
  • 1/4 teaspoon allspice

For the Toppings:

  • 1/4 cup chickpeas, drained and rinsed
  • 1 cup feta cheese, crumbled
  • 1/4 cup pine nuts
  • parsley, chopped
  • Green onion, chopped
  • 1 large beefsteak tomato, diced
  • 1/2 English cucumber, diced
  • 1/2 cup pitted olives, halved {optional}
  • 2 teaspoons za’atar , or sumac

Instructions

  • Combine all ingredients for the hummus in a food processor. Blend for 30 seconds to 1 minute, or longer for a creamier texture. Add a small amount of additional olive oil or cold water to thin out the hummus if you find it too thick. Set aside.
  • In a large skillet, heat 1 tablespoon of olive oil (or ghee) over medium-high heat. Add the chopped onion and minced garlic, and sauté until the onion is translucent.
