- 3 Tablespoons extra virgin olive oil, {more or less depending on how much you spread on the bread}
- 8 oz. mascarpone cheese
- 6 large strawberries, thinly sliced {about 1 1/2 cups sliced strawberries}
- 1/3 cup mint leaves, loosely packed, chopped
- 2 Tablespoons honey , {you could need more or less depending on how much honey you want on top}
- 1/2 lemon, zested

Arrange the baguette slices in a single layer on two baking sheets. Pour the extra virgin olive oil into a small bowl and use a pastry brush to lightly spread the olive oil over one side of each baguette slice.
