This Mixed Berry Caprese Orzo Salad is an absolute must-try for your next summer get-together!

Ingredients

  • 6 oz. orzo pasta, cooked according to package directions (feel free to use whole wheat or gluten-free options)
  • 6 oz. fresh blackberries
  • 6 oz. fresh blueberries
  • 8 oz. fresh strawberries, sliced (approximately 1 1/2 cups of sliced strawberries)
  • 4 oz. fresh buffalo mozzarella, sliced in half (about 2/3 cup of mozzarella)
  • 1/4 cup fresh basil, thinly sliced
  • 1/4 cup fresh mint, thinly sliced
  • 1 Tablespoon extra virgin olive oil
  • 1/4 teaspoon Nielsen-Massey Pure Lemon Extract
  • 1/4 teaspoon Nielsen-Massey Pure Vanilla Extract
  • 1/2 teaspoon honey (adjust to your desired sweetness)

Instructions

  1. Cook the orzo pasta according to the package instructions until al dente. Once cooked, drain the pasta and rinse it thoroughly under cold water to stop the cooking process and cool it down. Set aside.
  2. In a large mixing bowl, gently combine the blackberries, blueberries, sliced strawberries, fresh buffalo mozzarella, sliced basil, and sliced mint.
  3. Prepare the dressing: In a small mason jar with a lid, combine the extra virgin olive oil, Nielsen-Massey Pure Lemon Extract, Nielsen-Massey Pure Vanilla Extract, and honey. Secure the lid tightly and shake vigorously until all ingredients are well combined and emulsified.
  4. Pour the prepared dressing over the fruit, cheese, and herb mixture in the large mixing bowl. Gently toss everything together to ensure the dressing evenly coats all the ingredients.
  5. For best flavor, refrigerate the salad for at least an hour before serving to allow the flavors to meld. Alternatively, you can serve it immediately at room temperature. Enjoy!
