  • 2 flour tortillas, I recommend using soft flour tortillas (spread olive oil lightly on one side of each tortilla)
  • 1/4 cup chocolate chips, semi-sweet, milk, or dark
  • 1 banana, sliced into thin rounds
  • 3-5 strawberries, sliced
  • 1/4 cup peanut butter, smooth (or other nut/seed butter, or Nutella)
  • 2 teaspoons granulated sugar, divided into 1 teaspoon portions
  • 2 teaspoons ground cinnamon, divided into 1 teaspoon portions
  • 1 teaspoon olive oil, for rubbing tortillas (divided for each tortilla)

Instructions 

  1. Preheat your oven to 350 degrees Fahrenheit (175°C).
  2. Lightly rub one side of each flour tortilla with olive oil. Place one tortilla on a clean cutting board or work surface with the olive oil side down. Set the other tortilla aside for later.
  3. Spread the peanut butter evenly over the tortilla. Then, arrange the banana slices over the peanut butter, followed by the sliced strawberries. Finally, sprinkle the chocolate chips generously over the fruit.
  4. Place the second tortilla on top of the filled tortilla, ensuring the olive oil side faces upwards. Gently press down to seal the quesadilla. Sprinkle half of the combined cinnamon and sugar mixture over the top tortilla.
  5. Carefully transfer the quesadilla onto a baking sheet (lined with aluminum foil for easy cleanup). Bake in the preheated oven for 7 minutes.
