  • 1 cup sweet onion, chopped

  • 1 pound ground pork
  • 2 teaspoon Mexican oregano , {or regular oregano}
  • 1 1/2 teaspoon ancho chile powder
  • 1/2 teaspoon salt
  • 1/8 teaspoon black pepper
  • 2 bay leaves
  • 1 can diced chiles
  • 1 can fire roasted tomatoes , {or diced tomatoes}
  • 1 can white hominy, rinsed and drained
  • 4 cups chicken stock
  • cilantro, Freshly chopped, to garnish
  • Radishes, sliced, to garnish
  • Questo Fresco, crumbled, to garnish

  • In a large skillet, heat the 2 tablespoons of olive oil over medium-high heat.
