Roast Beef Sliders with cheese and onions

Sliders have a special place in my family’s heart, and for good reason! They are exceptionally simple to assemble, especially on those hectic evenings when time is of the essence. This recipe is a fantastic solution for transforming deli-sliced roast beef into something extraordinary, or for giving new life to any leftover roast beef you might have from a larger meal, like my beloved Spoon Roast Recipe.

Beyond sliders, leftover roast beef is incredibly versatile. I also love using it to create delicious Beef Crostini with Caramelized Onions, offering another delightful flavor experience. The combination in these sliders—salty roast beef, melted provolone, the deep sweetness of caramelized onions, all brought together by a unique savory-sweet glaze on the toasted buns—is truly irresistible. What makes this recipe even better is its adaptability. You can easily customize these roast beef sliders to suit your taste by adding various ingredients. Consider enhancing them with roasted red peppers for a smoky-sweet note, spicy pepperoncinis or banana peppers for a kick, or earthy sautéed mushrooms for added depth.

If you’re someone who appreciates a bit of heat, these sliders offer plenty of opportunities to spice things up. Swap out the provolone for a zesty pepper jack cheese, sprinkle a pinch of crushed red pepper flakes over the buns before baking, or drizzle a touch of your favorite hot sauce directly onto the beef for an extra zing. These small adjustments can transform the flavor profile, catering to all palates.

Essential Ingredients for Perfect Sliders

This easy recipe shines with simple, readily available ingredients that come together to create a truly memorable dish. Each component plays a crucial role in building the incredible flavor profile of these roast beef sliders.

Roast Beef Sliders ingredients
  • Onion: I prefer using yellow onions for their balanced sweetness and ability to caramelize beautifully, developing a deep, savory flavor that perfectly complements the roast beef. However, red onions can offer a sharper, slightly more piquant taste, while sweet onions provide a milder alternative.
  • Seasoning: A simple yet effective combination of kosher salt and black pepper is used to season the onions, drawing out their natural sweetness during the caramelization process and enhancing the overall flavor.
  • Cheese: Provolone cheese is my top choice for these sliders. Its mild, slightly nutty flavor pairs wonderfully with roast beef without overpowering it, and it melts into a perfectly gooey layer. While shredded provolone can be used, slices tend to create a more even and satisfying melt across the rolls. Feel free to experiment with other cheeses if you prefer.
  • Roast Beef: For ultimate convenience, thinly sliced deli roast beef is ideal. It saves prep time and ensures consistent tenderness. Alternatively, if you have leftover homemade roast beef, simply slice it thinly for an even more gourmet touch.
  • Hawaiian Rolls: These soft, sweet rolls are the foundation of a great slider. Their slight sweetness perfectly balances the savory fillings, and their tender texture holds up well to baking.
  • Maple Syrup: A touch of maple syrup in the butter glaze adds a wonderful subtle sweetness, creating a harmonious contrast with the savory elements and contributing to a beautifully golden-brown top crust.
  • Worcestershire Sauce: This ingredient is a secret weapon in the glaze, providing a rich, umami depth and savory complexity that truly elevates the overall flavor of the sliders.
  • Spicy Brown Mustard: Offering a delightful tang and a gentle kick, spicy brown mustard in the glaze adds another layer of flavor that complements both the beef and the cheese.
  • Garlic Powder: A pinch of garlic powder in the glaze infuses an aromatic warmth that enhances all the other flavors without being overwhelming.
  • Fresh Parsley & Poppy Seeds: These are optional but highly recommended garnishes, adding a touch of freshness and a delicate crunch, respectively, for a perfect finish.

Creative Recipe Modifications to Explore

One of the best things about sliders is their versatility! Don’t hesitate to get creative and customize this recipe to your liking. Here are some ideas to inspire you:

  • Roast Beef Varieties: While deli slices offer convenience, utilizing homemade Roast Beef provides an unparalleled depth of flavor. You could also try other thinly sliced meats like pastrami or smoked turkey for a different twist.
  • Onion Choices: Yellow onions caramelize beautifully, but red onions can add a more pungent flavor and vibrant color. Shallots, with their delicate oniony-garlicky taste, also work wonderfully when caramelized, offering a gourmet touch. The key is to take the time to caramelize them properly for maximum flavor.
  • Cheese Swaps: Provolone is a classic for its excellent melt and mild flavor, but the possibilities are endless! Experiment with sharp cheddar for a bolder taste, Colby Jack for a smooth, creamy melt, spicy pepper jack for a kick, classic Swiss for a nutty flavor, or mozzarella for ultimate stretchiness. A blend of cheeses can also create a complex flavor profile.
  • Mustard Alternatives: The spicy brown mustard in the glaze adds a zesty punch. However, honey mustard provides a sweeter, milder flavor, classic yellow mustard offers a familiar tang, and horseradish mustard can introduce a delightful, pungent heat that pairs exceptionally well with roast beef.
  • Add Some Heat: If you love spice, finely diced fresh red chili or chopped pickled jalapeños can be layered directly with the roast beef. For a milder but still noticeable warmth, a sprinkle of cayenne pepper in the butter glaze or a dash of your favorite hot sauce on the beef can do the trick.
  • Elevate with Sauces: A great sauce can truly take these roast beef sliders to the next level. Consider a creamy horseradish sauce for a classic pairing. A yogurt-based sauce, like this refreshing Tahini Yogurt Sauce, can add a bright, tangy element. For a fresh and vibrant flavor, try serving them with salsa or homemade Pico de Gallo. A creamy dill sauce could also offer a unique and herbaceous twist.
  • Other Delicious Add-ins: Don’t limit yourself! Pickles (dill or bread and butter) add a tangy crunch. Roasted red peppers bring a smoky sweetness. For an extra zing, include pickled red onions or a medley of quick pickled vegetables. Sautéed mushrooms or crispy bacon bits are also fantastic additions that boost the umami factor.

How to Cook Roast Beef Sliders

Creating these delectable roast beef sliders is a straightforward process. Follow these simple steps for a perfect batch every time:

Step 1. Prepare Your Oven and Baking Sheet: Begin by preheating your oven to a comfortable 350°F (175°C). While the oven heats, line a 9×13-inch baking sheet with parchment paper. This simple step is crucial for preventing sticking and making cleanup a breeze. Set the prepared baking sheet aside.

Step 2. Caramelize the Onions to Perfection: In a medium sauté pan, combine the thinly sliced yellow onions, a tablespoon of olive oil, 1 tablespoon of unsalted butter, kosher salt, and black pepper. Cook over medium heat for about 3 minutes until the onions begin to soften. Then, reduce the heat to medium-low and continue to cook for another 10-12 minutes, stirring occasionally, until the onions are beautifully soft and slightly golden-brown, indicating a delicious caramelization. This step adds immense flavor to your sliders. Once done, remove from heat and set aside.

Step 3. Prepare the Hawaiian Rolls: Using a sharp serrated knife, carefully slice the entire block of Hawaiian rolls horizontally, separating the top half from the bottom half while keeping all the individual rolls connected. Gently place the bottom section of the rolls onto your parchment-lined baking sheet. Arrange six slices of provolone cheese evenly over the bottom layer of rolls. This foundational layer will begin to melt and envelop the beef as it bakes.

Step 4. Layer the Roast Beef and Onions: Now for the stars of the show! Generously layer the thinly sliced roast beef over the provolone cheese on the rolls. Ensure an even distribution so every slider gets a good amount of savory beef.

Next, spoon the delicious caramelized onions evenly over the roast beef. Their sweet and savory notes will meld beautifully with the beef and cheese.

Step 5. Add More Cheese and the Top Buns: Place the remaining six slices of provolone cheese over the caramelized onions. This creates a double layer of gooey goodness. Finally, carefully position the top half of the Hawaiian rolls back onto the assembled sliders. Press down gently to ensure everything is snugly in place.

Step 6. Whisk Together the Flavorful Butter Glaze: In a small bowl, combine the remaining 3 tablespoons of melted unsalted butter with maple syrup, Worcestershire sauce, spicy brown mustard, and garlic powder. Whisk these ingredients together until they are thoroughly combined and create a smooth, aromatic glaze. This mixture will infuse the rolls with incredible flavor and help them turn a beautiful golden color.

Step 7. Glaze the Sliders: Using a pastry brush, generously brush the prepared butter mixture over the entire top surface of the slider buns. This glaze is key to achieving that delicious, slightly crispy, and sweet-savory crust. If desired, sprinkle a little Italian seasoning, dried minced onion, or your favorite spice blend over the glaze for an extra layer of flavor and visual appeal.

Step 8. Bake Until Golden and Melty: Carefully cover the entire baking sheet with an aluminum foil tent. This tent will help trap heat and moisture, ensuring the sliders heat through evenly and the cheese melts perfectly without the tops burning. Bake for 15-20 minutes, or until the sliders are heated through, the cheese is gloriously melted and bubbly, and the buns are lightly golden brown around the edges. Keep an eye on them during the last few minutes to prevent over-browning.

Step 9. Garnish and Serve Immediately: Once baked to perfection, remove the sliders from the oven. For a beautiful finish and an extra pop of flavor and texture, sprinkle them generously with poppy seeds and fresh, chopped parsley over the tops of the rolls. You could also use everything bagel seasoning or sesame seeds for a different twist. Serve these irresistible roast beef sliders warm and watch them disappear!

Storage & Reheating Tips

If you happen to have any leftover roast beef sliders (a rare occurrence!), proper storage and reheating will ensure they remain delicious for another meal.

Storage: Allow the sliders to cool completely to room temperature before storing. Place them in an airtight container and refrigerate for up to 5 days. This will help maintain their freshness and prevent them from drying out.

Reheating: For best results when reheating, gently warm the leftover roast beef sliders in the oven. Preheat your oven to 300°F (150°C), place the sliders on a baking sheet, and heat for about 10-15 minutes, or until warmed through and the cheese is melted. Covering them loosely with foil can help prevent the buns from becoming too dry. Alternatively, you can reheat them in an air fryer for a crispier bun – just keep a close eye on them to prevent burning.

Frequently Asked Questions (FAQ)

What is the best way to cut the buns for sliders?

To ensure your sliders hold together perfectly during assembly and baking, it’s crucial to cut the Hawaiian rolls horizontally as one single unit. This means slicing through the entire block of rolls to separate the top and bottom halves while keeping the individual rolls connected. A sharp serrated knife works best for this task, providing clean cuts and minimizing tearing. This method helps maintain the structural integrity of the sliders, making them easier to handle and serve.

How can I add more flavor to these roast beef sliders?

For an unparalleled depth of flavor, I highly recommend taking the extra time to properly caramelize your onions. This slow cooking process transforms ordinary onions into a sweet, savory, and richly flavored ingredient that significantly enhances the sliders. Beyond the onions, consider adding a sprinkle of dried onion flakes or garlic powder to the butter glaze, or even a dash of smoked paprika for a subtle smoky note. Don’t forget the power of fresh herbs like thyme or rosemary, which can be finely chopped and added to the beef layer for an aromatic boost.

Can I prepare these roast beef sliders ahead of time?

Absolutely! These sliders are excellent for make-ahead convenience. You can assemble them completely, including brushing on the butter glaze, and then cover the baking dish tightly with plastic wrap. Store them in the refrigerator for up to 24 hours. When you’re ready to bake, simply remove them from the fridge about 15-20 minutes before baking to allow them to come closer to room temperature, then bake as directed. This makes them a perfect option for entertaining or busy weeknights.

What side dishes pair well with roast beef sliders?

These savory roast beef sliders pair wonderfully with a variety of side dishes. For a light and fresh accompaniment, consider a crisp green salad, coleslaw, or a vibrant pasta salad. Heartier options include crispy sweet potato fries, a classic potato salad, or even a warm cup of tomato soup for dipping. For a casual gathering, a simple bowl of potato chips or pickles would also be a great addition.

  • 3 teaspoons Worcestershire sauce
  • 2 teaspoons spicy brown mustard
  • 1/4 teaspoon garlic powder
  • 1 tablespoon fresh parsley
  • 1 teaspoon poppyseeds

Instructions

  • Preheat the oven to 350° F. Line a 9×13 baking sheet with parchment paper. Set aside.
  • Heat a large skillet over medium heat. Add the onions, olive oil, 1 tablespoon butter, and salt and pepper to the pan and sauté for 3 minutes. Turn the heat down to medium-low and continue to cook for 10-12 minutes or until the onions are soft and slightly caramelized. Set aside.
  • Cut the rolls horizontally in half. Place the bottom of the rolls onto the baking sheet.
  • Place 6 slices of provolone cheese on the rolls. Top the cheese with the roast beef.
  • Top the roast beef with the caramelized onions. Top the onions with 6 slices of cheese. Add the top of the rolls to the sliders.
  • To a bowl add 3 tablespoons of melted butter, maple syrup, Worcestershire sauce, mustard, and garlic powder. Mix until combined.
  • Use a pastry brush to brush the butter mixture on top. Cover the top of the rolls with an aluminum foil tent.
  • Bake for 15-20 minutes or until the sliders are heated through and the cheese has melted. Remove from the oven and top with poppy seeds and fresh parsley.

Notes

  • Double the Recipe: This recipe is easily doubled or tripled if you are feeding a larger group. Adjust baking time slightly if needed for larger batches.
  • Fridge Storage: Store any leftover sliders in the refrigerator in an airtight container for up to 5 days to maintain freshness.
  • Reheat for Best Results: To reheat leftover roast beef sliders, slowly warm them in the oven at 300 degrees F (150 C) until heated through and cheese is melty again. You also could use an air fryer for a quicker reheat and crispier bun, but be mindful not to overcook.
  • Choose the Right Buns: The type of buns you use greatly impacts the slider experience. I highly recommend using Hawaiian sweet rolls or small potato rolls. Their soft texture and slight sweetness provide the perfect complement to the savory fillings.
  • Caramelize the Onions for Maximum Flavor: This step is key! If you have extra time, I highly suggest taking the full 10-12 minutes to caramelize the onions. This process develops a rich, sweet, and savory depth that truly enhances the overall flavor of the sliders.
  • Precision in Cutting Buns: For structural integrity, make sure to cut the buns horizontally through the entire block of rolls, keeping them intact. This simple technique ensures the sliders stay together better during assembly and baking, and makes serving much easier.
