Creamy Mexican Dip is all the flavors you like in your favorite Mexican dip, avocado, cilantro, red onion and salsa, but lightened up using Greek yogurt instead of sour cream.

Ingredients

  • ½ avocado, mashed
  • 1 cup Greek Yogurt (I used Stonyfield)
  • ¼ cup sour cream (optional, for extra thickness, but tastes great without it)
  • ½ cup salsa (I used a medium salsa for extra spice, but any kind works)
  • ¼ cup cilantro, chopped (for the dip)
  • ½ red onion, finely chopped (for the dip)
  • ½ teaspoon cumin
  • ½ teaspoon salt

For Garnish:

  • ½ avocado, chopped into cubes
  • 2 Tablespoons cilantro, chopped
  • 2 Tablespoons red onion, finely chopped

Instructions

  1. In a small mixing bowl or a guacamole molcajete, mash ½ of the avocado until smooth.
  2. In a medium mixing bowl, combine the mashed avocado, Greek yogurt, optional sour cream, salsa, ¼ cup chopped cilantro, ½ finely chopped red onion, cumin, and salt. Mix thoroughly until all ingredients are well combined.
  3. Taste the dip and adjust seasoning as needed. You might want a little more salt, cumin, or a squeeze of lime juice for extra zest.
  4. Transfer the dip to a serving bowl. Garnish generously with the remaining ½ chopped avocado, 2 Tablespoons chopped cilantro, and 2 Tablespoons finely chopped red onion.
  5. Serve immediately with your favorite chips or fresh vegetables, or chill for a few hours to allow flavors to deepen.

Notes

You can use half sour cream and half Greek yogurt if you prefer a slightly richer, yet still lighter, dip.
