    • 1/2 medium sweet onion, chopped

    • 2 teaspoon coriander
    • 1/2 teaspoon paprika
    • 1/4 teaspoon cinnamon
    • 2 cups red lentils, rinsed until water runs clear
    • 1-15 ounces can diced tomatoes
    • 4 cups vegetable broth
    • Salt and pepper to taste

    Instructions 

    • Heat 2 Tablespoons olive oil in a large pot or a dutch oven over medium heat. Add the chopped onion and minced garlic and sauté for about 2 minutes until they are softened and fragrant. Then, stir in the ground cumin, turmeric, coriander, paprika, and cinnamon, continuing to sauté for another 4 minutes to allow the spices to bloom and release their full aroma. Finally, add the chopped carrots and cook until they start to become tender, which usually takes about 10 minutes.
    • Pour in the vegetable broth, add the diced tomatoes (undrained), and the rinsed red lentils. Stir all the ingredients together to combine them thoroughly. Bring the mixture to a gentle simmer, then reduce the heat to low, cover the pot, and let it cook for approximately 20 minutes, or until the red lentils are completely tender and have started to break down. Stir occasionally to prevent sticking.
    • At this stage, you have a choice regarding texture. You can enjoy the soup as is, with its delightful chunks of carrots, lentils, and tomatoes, or you can opt for a creamier consistency. To achieve a smooth soup, use a handheld immersion blender directly in the pot, blending until it reaches your desired creaminess. Alternatively, carefully transfer portions of the soup to a regular blender (be cautious with hot liquids and blend in batches) until smooth. Sometimes, I like to blend about half of the soup and leave the other half chunky, creating a wonderfully varied texture.
