  • 1 medium english cucumber, diced
  • 1/4 cup peperoncinis, chopped
  • 1/2 cup feta cheese, crumbled
  • 5 green onions, white and green parts chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh mint, chopped {optional}

FOR THE DRESSING

  • 1/4 cup extra virgin olive oil
  • 3 Tablespoons red wine vinegar
  • 2 Tablespoons lemon juice
  • 1 teaspoon honey
  • 1 garlic clove, minced
  • 2 teaspoons dried oregano
  • 1/4 teaspoon salt
  • 1/8 teaspoon of black pepper

Instructions

  1. Rinse the quinoa thoroughly under cold running water. Use your hands to ensure all grains are well rinsed, then drain well. This step is crucial for removing saponins, which can impart a bitter taste.
  2. In a medium-sized pot, bring 1 cup of water to a rolling boil. Add the rinsed quinoa and 1/2 teaspoon of salt to the boiling water. Once it returns to a boil, immediately reduce the heat to low, cover the pot tightly, and allow it to simmer gently for about 10-15 minutes, or until all the water has been completely absorbed and the quinoa is light and fluffy. Remove the pot from the heat and let the cooked quinoa cool completely before proceeding.
  3. While the quinoa cools, begin preparing your fresh vegetables. In a large mixing bowl, combine the diced red bell pepper, halved cherry tomatoes, pitted and halved Kalamata olives, chopped roasted red peppers, diced English cucumber, chopped peperoncinis, crumbled feta cheese, chopped green onions (white and green parts), and fresh parsley.
