- 4 cups kale
- 1 Tablespoon extra virgin olive oil
- 1 mango, skin and pit removed, chopped
- 1 1/2 cups strawberries, sliced
- 1 1/2 cups pineapple, chopped

- 1/2 cup silvered almonds
- 2 Tablespoons lime juice
- 1 Tablespoons sugar
- 2 Tablespoons olive oil
- 1 garlic , minced
- 1/4 teaspoon salt
- 1/4 teaspoon pepper

Cook the quinoa according to the package directions. Allow it to cool completely before adding to the salad.

In a large mixing bowl, combine the kale and 1 Tablespoon of olive oil. With clean hands, gently massage the kale for 3-4 minutes. You’ll notice the kale will become significantly tender and reduce in volume by about half as the olive oil is thoroughly worked into the leaves.

Add the chopped mango, sliced strawberries, chopped pineapple, diced cucumber, slivered almonds, and the cooled cooked quinoa to the bowl with the massaged kale. Mix all the ingredients well to combine them evenly.
