  • In a large skillet, heat 2 Tablespoons olive oil over medium heat. Add the ground pork and cook until browned, breaking it up with a spoon. Drain any excess fat.
  • Add the browned ground pork to the slow cooker along with all the remaining ingredients: minced garlic, diced sweet onion, chopped bell pepper, jalapeño (if using), chili powder, cumin, paprika, oregano, cayenne pepper (if using), drained and rinsed black beans, drained and rinsed pinto beans, diced tomatoes, tomato paste, and drained and rinsed corn. Stir everything together until well combined.
  • Cover and cook on low for 5-6 hours or high for 3-4 hours.
  • Serve warm in soup bowls with your choice of toppings like sour cream, avocado, cheese, chopped red onion, cilantro, and hot sauce.
