Warm weather means grilling season and this Greek Shrimp Marinade is the perfect way to make your summer shrimp on the grill.

Ingredients 

  • 1 pound large shrimp peeled and deveined (tails on or you can remove them}
  • 1/4 cup Extra Virgin Olive Oil
  • 1/2 teaspoon dried dill
  • 1 teaspoon dried parsley
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon garlic powder
  • 1 lemon, juiced plus 1 tsp. lemon zest
  • 1/2 teaspoon salt
  • 1/8 teaspoon black pepper
  • Fresh dill and parsley for garnish
  • Fresh feta cheese for garnish
  • Serve with tzatziki sauce

Instructions 

  • If you plan to use wooden skewers you will want to soak them in water before using them on the grill.
  • In a large ziplock bag or large medium bowl put the olive oil, dill, parsley, oregano, basil, thyme, garlic powder, lemon juice and zest. Add the salt and pepper.
  • Add in the shrimp and use tongs or your hands to gently coat the marinade on the shrimp.
  • Marinate the shrimp for 30 minutes. Because of the lemon juice don’t marinade longer than 2 hours or the shrimp beging to break down from the acid in the lemon juice.
  • Set out your metal or wooden skewers. Thread the shrimp on the skewers.
  • Heat the grill to medium hight heat.
  • Spray with oil to prevent the shrimp skewers from sticking.
  • Put the skewers on the grill and cook for about 3-5 minutes per side, or until the shrimp are pink on the outside and the meat inside should be white and opaque. Do not overcook the shrimp or else it will become tough.
  • Remove the shrimp from the grill and garnish with fresh dill and parsley, feta cheese and lemon wedges.

Notes

  • Serve with tzatiki sauce and with an orzo salad. You could also grill vegetables alongside the skewers.
  • These shrimp work great over a salad, in a rice or quinoa bowl or on their own.
