Our morning began with an extensive taste test of all the different Sabra hummus varieties. This included a sneak peek at the then-upcoming Rosemary & Sea Salt flavor, which was incredibly delicious – I honestly couldn’t stop eating it! My personal favorite, however, remains their refreshing Lemon Twist. Each flavor offered a unique experience, showcasing the versatility of hummus as a base for various culinary profiles.

After our tasting session, we were plunged into a “Chopped” style challenge in Sabra’s stunning test kitchen. While photos weren’t allowed (to maintain strict hygiene standards), the insights gained were invaluable. It reinforced their commitment to producing a superior product.

Southwestern Avocado Quinoa Salad

Ingredients
- 1 cup quinoa, cooked
- 1/2 red pepper, chopped
- 1/2 orange pepper, chopped
- 5 green onions, green parts chopped
- 1 can black beans, drained and rinsed
- 1/3 cup cilantro, chopped
- 1/2 pint cherry tomatoes, halved
- 1 avocado, seed removed, chopped

Chipotle Hummus Dressing:
- 1/3 cup Sabra Chipotle Hummus
- 2 Tablespoons water, {more for a thinner dressing}
- 1/2 lime, juiced
- 1/2 teaspoon cayenne red pepper
- 2 teaspoon cumin
- Salt and pepper to taste
Instructions
- Rinse the quinoa in a small mesh strainer. Set aside. Cook the quinoa according to the package directions.
- While the quinoa is cooking, combine the chopped red pepper, orange pepper, green onions, black beans, fresh cilantro, and cherry tomatoes in a large bowl. Mix well and set aside.
- In a small separate bowl, prepare the Chipotle Hummus Dressing by combining the hummus, water, lime juice, cayenne red pepper, cumin, and a dash of salt and pepper. Whisk thoroughly until the dressing is smooth and well combined. Taste and adjust seasonings as desired. Add more water if you prefer a thinner consistency.
- Once the quinoa has cooled, add it to the vegetable mixture in the large bowl, along with the chopped avocado. Pour about half of the prepared dressing over the salad and gently stir to combine. Taste the salad and add more dressing to your preference.
- Garnish with additional fresh cilantro and green onions, then serve immediately and enjoy your flavorful Southwestern Avocado Quinoa Salad!
